This Zucchini Fritters Recipe is a vegetarian recipe thatโ€™s fun to put together, a healthy appetizer or side dish recipe. It is crispy on the outside and perfectly soft on the inside.

My kids arenโ€™t huge fans of zucchini but somehow do not mind devouring this Zucchini fritters recipe. They are so tasty, crispy on the outside, and perfectly soft on the inside. Loaded with flavor and veggies, this healthy fritters recipe is great to try to incorporate into your kidโ€™s meals and dinner table.

You can have these loaded veggie fritters as an appetizer or side dish. Serve it with some grilled chicken kafta or some blackened salmon.

Ingredients needed

This is just a quick list of ingredients you will need to make this recipe. Full measurements are listed further down below in the recipe card.

  • Zucchini: I like using green zucchini instead of yellow.
  • Sweet Potato , peeled
  • Medium Carrot peeled
  • Chopped green onion
  • Garlic Cloves, minced
  • Chopped Parsley
  • Salt and Ground Pepper
  • Eggs
  • Rice Flour: or any other flour like all-purpose, wheat, or oat flour.
  • Parmesan Cheese: store-bought of grate your own.
  • Olive or Avocado oil

How to make zucchini fritters

  • The easiest way to prep the veggies is by using your food processor and setting up the small shredding blade. Alternatively, you can use a medium-small grater. The veggies need to be grated in small bits so they can cook evenly.
  • Start by grating the zucchini, then squeeze as much water as you can and place them in a large bowl.
  • Continue to shred the sweet potato and carrot and add it to the bowl. Stir in the remaining ingredients: green onion, garlic, parsley, salt, pepper, eggs, rice flour, and cheese. Using your hands or a large spoon, mix thoroughly until well combined.
  • Heat oil in a large nonstick pan over medium heat. Add about one spoonful of mixture into the pan, and gently press it down to create a round shape fritter.
  • Cook about four fritters at a time for about 3-4 minutes per side. Transfer to a paper towel-lined plate until finished.
  • Serve with your favorite dip and enjoy!

  • Flour: use any flour you have on hand. Gluten-free or oat flour will be good substitutes. You may also use almond flour but this will change how moist the fritters will be.
  • Tip: squeeze the water out of the veggies to remove any extra liquids from the veggies.
  • Store leftovers in an airtight container and reheat in the microwave when ready to serve.
  • You may freeze cooked fritters for up to 3 months.
  • Replace fresh garlic with 1 tablespoon of garlic powder.

Easy Zucchini Fritters Recipe

Ingredients

  • 1 Large Zucchini
  • 1 Small Sweet Potato , peeled

    I have cooked this a few times with great appreciation from my family. Last time I added chirizo for a bit of bite and that was quite successful.

      This was absolutely delicious. I have a carrot allergy so I just did two small sweet potatoes instead of 1. Quick and easy!

    1. The egg serves as a binding agent. You can use flaxseed mixed in with some water. Or a bit of greek yogurt watered to be runnier for dipping and binding the flour and crumbs

      1. Can I just use all purpose flour instead of rice flour? If so how much all purpose flour -1/2 cup? Iโ€™m making finger foods for Christmas instead of a sit down meal. My family passes up veggie trays so I thought they might pop these in their mouth.
