  • Zucchini: Choose medium to large zucchinis. You can use the yellow version but we recommend using the green zucchinis.
  • Marinara Sauce: any brand will do. Just go ahead and use whichever you have handy.
  • Mozzarella Cheese: Use shredded mozzarella cheese. If you like you can use low-fat cheese.
  • Pepperoni: Use mini kinds. We used turkey instead of pork but use any kind you prefer.
  • Additional toppings: Optional toppings can be fresh parsley, black sliced olive, or sliced jalapenos.

  • Prep the zucchini. Slice the zucchini 1 inch thick, and using a melon baller, scoop a bit from the inside, to create a small cup that will hold in the sauce.
  • Add toppings. Arrange the zucchini on a prepared baking sheet and top with marinara sauce, mozzarella, and pepperoni slices.
  • Bake. Bake in the preheated oven for 8-10 minutes, or until the cheese melted and bubbly.

  • If you don’t have marinara sauce, low carb pizza sauce or a tomato sauce works great too. 
  • Mozzarella works great on these  Zucchini Pizza Bites, but they can be made with any cheese.
  • To make larger rounds, slice zucchini diagonally.
  • Strands of pre-shredded mozzarella can be too long and messy, finely shred your own or roughly chop bagged shredded mozzarella to make sprinkling easier.
  • You can use a grill pan or a nonstick skillet.
  • Finely dice some red or yellow bell pepper and sprinkle it on top for more veggie goodness!
  • Feel free to top with your favorite pizza toppings, chopped up!

Can you eat the skin of a Zucchini?

The skin of zucchini is perfectly safe to eat. Larger sized zucchinis that are waxed can taste a bit bitter so you may peel if you like but not necessary. But most zucchinis tastes just fine with skin on you can wash and eat with the skin. We left the skin on for this Zucchini Pizza Bites recipe.

  • 2 Large Zucchini
  • ½ Cup Marinara Sauce
  • 1¼ Cup Shredded Mozzarella Cheese
  • ½ Cup Mini Pepperoni Slices I used turkey
  • Fresh Chopped Parsley or Basil to garnish

    These make a nutritious snack for kids! I used turkey pepperoni on half of the zucchini and meatless sausage crumbles on the other half. Yum!
