- Marinara Sauce: any brand will do. Just go ahead and use whichever you have handy.
- Mozzarella Cheese: Use shredded mozzarella cheese. If you like you can use low-fat cheese.
- Pepperoni: Use mini kinds. We used turkey instead of pork but use any kind you prefer.
- Additional toppings: Optional toppings can be fresh parsley, black sliced olive, or sliced jalapenos.

- Prep the zucchini. Slice the zucchini 1 inch thick, and using a melon baller, scoop a bit from the inside, to create a small cup that will hold in the sauce.
- Add toppings. Arrange the zucchini on a prepared baking sheet and top with marinara sauce, mozzarella, and pepperoni slices.
- Bake. Bake in the preheated oven for 8-10 minutes, or until the cheese melted and bubbly.
