Garlic Roasted Mushrooms are super easy and baked in the oven for a dinner or game day recipe that is healthy, full of fresh flavors, and ready in minutes. Serve these healthy, baked garlic mushrooms with your favorite proteins, or keep the whole meal plant-based.

Roasting mushrooms in the oven is one of our favorite ways to prepare dinner at home because they are gluten-free, a little crispy, and full of aromatic fresh flavors from the leafy thyme and robust garlic. This recipe contains olive oil instead of butter and makes this recipe vegan and completely dairy-free!

Baked mushrooms with garlic are simple to prepare for any occasion–casual or special. We like to switch things up with different varieties of mushrooms whenever we are feeling more creative than usual.

These roasted mushrooms will pair well with almost anything. We usually switch back and forth between these baked mushrooms or Garlic Roasted Broccolini because both are so mouthwatering and delicious–prepare them at the same time!

  • Garlic Cloves: Whole garlic cloves are roasted in the oven with the mushrooms and allow the mushrooms to be extra savory and bold with flavors of garlic. In a pinch, garlic powder will work.
  • Salt and Pepper: Kosher sea salt and black pepper give these mushrooms a little extra flavor and make them much more enjoyable. Feel free to adjust the seasoning as needed.

  • Mix Ingredients: First, preheat the oven to 350 degrees Fahrenheit. In a bowl, mix the cleaned mushrooms with some minced garlic, salt, pepper, and olive oil.

Ingredients

  • 1 pound Button Mushrooms Cleaned
  • 3 Tablespoons Olive Oil
  • 6-8 Garlic Cloves Peeled
  • a pinch of salt and pepper
  • Fresh chopped thyme to taste or Parsley

Instructions

  • Preheat the oven to 400F.
  • In a large bowl add all the ingredients and mix to combine. You can mince 2 of the garlic cloves and add to the mixture and leave the others whole.
  • Place them on a baking sheet in a single layer and roast for about 20 minutes, mixing halfway through.
  • Garnish with more fresh thyme and enjoy!

      Hi Fizza. What you can actually do first is boil the potatoes just a bit on your stovetop until a knife can go through. Then cut them up and simply roast with mushroom. The same amount of time. It should be just fine.

    I modified the recipe by adding some baby bellos and some shiitakes. Paired with venison steaks dipped in Stubbs Hickory Bourbon BBQ sauce and grilled along side some Yukon gold potato planks with olive oil and rosemary. Yummy! Next weekend, root soup in a crock pot.
