I love this Avocado Cucumber Tomato Salad so much! It tastes great and smells so delicious. It is a light and refreshing salad made with a lemon and herb dressing that makes for a perfect side dish.

The best part about making this Avocado Cucumber Tomato Salad is that you can make it in no time. I love the combination of avocados 🥑 with tomatoes 🍅 and when I started making this salad, the plan wasn’t to add avocados. But I am so glad that I did. Thankfully all my kids love avocados so this salad was a hit. 10/10!! Made with a simple lemon dressing that pairs so well with the flavors and freshness of this salad.

Avocado Cucumber Tomato Salad

Ingredients you will need

  • English cucumber: or any cucumbers you have on hand. I also like Persian cucumber.
  • Cherry tomatoes: I love cherry tomatoes and If I can use them on all my salads I will. My next choice would be vine-ripe tomatoes.
  • Red onions: I love red onions in salads. Or you can use sweet onions.
  • Avocado: Do not use mushy avocados. Firm ones will work great.
  • Fresh herbs such as dill, cilantro, basil, or parsley: Use what you have. Parsley and dill will take it to another level.
  • Lemon juice: you can use lime
  • olive oil: my go-to oil for salads. A must
  • salt and pepper to taste

How to make it

There are just 3 steps to making this salad. Wash and chop the ingredients. Place them in a bowl, and add in the homemade dressing which is just olive oil and lemon juice..

  • Place the cucumber, tomatoes, onion, and herbs in a bowl. Pour in the lemon juice and olive oil; toss to coat.
  • Add the avocado slices and gently toss. Season to taste with salt and pepper and serve.

How to store it

Salads taste best as soon as they are prepared and do not store well. You can still store them even though you will lose some of its crunch. Place them in a sealed container in the fridge for up to 3 days.

If an avocado is ripe and ready but you aren’t ready to use it, then it is best to store it in the fridge to preserve it for a few more days until you are ready. If the avocado is more on the hard side, you do not have to refrigerate it just yet. It can sit on the kitchen counter for a few days.

Equipment

  • Sharp Chef's knife
  • cutting board
  • Large bowl

Ingredients

  • 1 Large English cucumber, quartered and thinly sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1 avocado, peeled and thinly sliced
  • 1/4 cup fresh herbs such as dill, cilantro, basil or parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  • Place the cucumber, tomatoes, onion, and herbs in a bowl. Pour in the lemon juice and olive oil; toss to coat.
  • Add the avocado slices and gently toss. Season to taste with salt and pepper and serve.

Notes

  • if you do not have cherry tomatoes, use vine-ripe tomatoes
  • Persian cucumbers will work well in place of the English cucumbers
  • I recommend you use fresh ingredients only for the best flavor.
  • Use fresh lemon juice instead of bottled lemon juice.
