Ingredients

English cucumber
quartered and thinly sliced

cherry tomatoes
halved
1/4
cup
thinly sliced red onion

avocado
peeled and thinly sliced
1/4
cup
fresh herbs such as dill
cilantro, basil or parsley

tablespoon
lemon juice

tablespoon
olive oil
salt and pepper to taste
Instructions
Place the cucumber, tomatoes, onion, and herbs in a bowl. Pour in the lemon juice and olive oil; toss to coat.
Add the avocado slices and gently toss. Season to taste with salt and pepper and serve.
Notes
if you do not have cherry tomatoes, use vine-ripe tomatoes
Persian cucumbers will work well in place of the English cucumbers
I recommend you use fresh ingredients only for the best flavor.
Use fresh lemon juice instead of bottled lemon juice.
