Garlic-roasted mushrooms are super easy and baked in the oven for a simple and easy side dish to add to your dinner table or game day recipe that is full of fresh flavors and ready in minutes. Serve them with your favorite proteins, or keep the whole meal plant-based.

These roasted mushrooms will pair well with almost anything. I usually switch back and forth between these mushrooms and my Garlic Roasted Broccolini because both are so mouthwatering and delicious–prepare them at the same time!

Garlic Roasted Mushrooms Recipe

Ingredients needed

Below is a list of ingredients you will need to make these mushrooms. Full measurements are listed further down in the recipe card.

  • Button Mushrooms: I like using brown button mushrooms, but you can use portobello, shiitake, morel, cremini, etc.
  • Olive Oil: Or you may use avocado oil.
  • Garlic Cloves: Fresh garlic works best.
  • Salt and Pepper
  • Thyme: Optional, but fresh thyme adds a different element to this recipe and tastes amazing atop the mushrooms. Try rosemary, parsley, cilantro, or oregano in place of the thyme.

How to make it

  • Mix Ingredients: First, preheat the oven to 350 degrees Fahrenheit. In a bowl, mix the cleaned mushrooms with some minced garlic, salt, pepper, and olive oil.
  • Bake Mushrooms: Next, place all of the ingredients on a clean baking sheet and arrange everything in a single layer. Roast the mushrooms for twenty minutes and remove from the oven once done.
  • Serve: Top the baked mushrooms with the optional thyme and enjoy! Adjust the salt and pepper as needed.

Common Questions

Can you freeze mushrooms?

Yes, you can, but it is suggested to cook the mushrooms straight from being frozen since they contain such high moisture levels and can throw the textures off.

Can I slice the mushrooms instead?

Yes, you do not have to keep them whole. If you prefer to slice them, you can. They will take a bit less time to roast.

Would garlic powder work?

If you do not have fresh garlic, you can add about 1 tablespoon of garlic powder.

Can I make them in the air fryer?

Yes. You can air fry them at 400°F for about 15 minutes if you are keeping the mushrooms whole. I suggest you open the air fryer at 5 and 10 minutes to give them a good shake. Check them at the 12 to 15 minutes mark.

How to store leftovers?

Store the leftovers in the refrigerator in an airtight container for up to four days. Reheat the mushrooms in the microwave or oven.

  • Instead of olive oil, you can use avocado or grapeseed oil.
  • Top these mushrooms with parmesan cheese for extra savoriness.
  • Dip the mushrooms into your favorite dipping sauces.
  • Instead of roasting the garlic whole, you can mince the garlic and toss it with the mushrooms.
  • You can add onions add red, yellow, or white onions, to the sheet pan to bake.
  • Make garlic butter mushrooms by using melted butter in place of the oil.

This recipe for oven-roasted Garlic Mushrooms is ready in about 30 minutes and is filled with the best tender and earthy flavors. Baked mushrooms and crispy garlic are fused together and tossed with fresh herbs, olive oil, salt, and pepper for the easiest gluten-free side dish that is made on a sheet pan!

Ingredients

  • 1 pound Button Mushrooms, Cleaned
  • 3 Tablespoons Olive Oil
  • 6-8 Garlic Cloves, Peeled
  • a pinch of salt and pepper
  • Fresh chopped thyme to taste, or Parsley

Instructions

  • Preheat the oven to 400F.
  • In a large bowl, add all the ingredients and mix to combine (1 pound Button Mushrooms, 3 Tablespoons Olive Oil, 6-8 Garlic Cloves, and a pinch of salt and pepper). You can mince 2 of the garlic cloves and add them to the mixture, and leave the others whole.
  • Place them on a baking sheet in a single layer and roast for about 20 minutes, mixing halfway through.
  • Garnish with Fresh chopped thyme to taste and enjoy!

    1. Hi Fizza. What you can actually do first is boil the potatoes just a bit on your stovetop until a knife can go through. Then cut them up and simply roast with mushroom. The same amount of time. It should be just fine.

    I modified the recipe by adding some baby bellos and some shiitakes. Paired with venison steaks dipped in Stubbs Hickory Bourbon BBQ sauce and grilled along side some Yukon gold potato planks with olive oil and rosemary. Yummy! Next weekend, root soup in a crock pot.
