HOW TO MAKE BLUEBERRY BANANA PANCAKES

We will be showing you how simple it is to make easy blueberry pancakes

  • Preheat a griddle or large skillet over medium heat and coat it with cooking spray.
  • Add all the ingredients except for blueberries to a blender and blend on high until the oats are pureed and the batter is smooth. About 1-2 minutes.
  • Pour the batter into a bowl and fold in the blueberries. Place a heaping 1/4 cup of batter onto the skillet for each pancake; cook for approximately 3 minutes or until pancake is lightly browned.
  • Flip each pancake and cook for an additional 2 minutes. Repeat the process with the remaining batter.
    Serve immediately, topped with maple syrup, bananas, and blueberries.

CAN I USE FROZEN BLUEBERRIES IN PANCAKES

You can certainly use frozen blueberries for your pancakes if you don’t have fresh blueberries handy. Simple replace the fresh with the frozen and follow the same instructions. You do not need to thaw the blueberries.

Place blueberry pancakes in an airtight container or a high-grade freezer bag before storing it in the freezer to prevent freezer burns.

Blueberry Banana Pancakes
Pancakes made with Greek yogurt and oatmeal, with no sugar added to the batter.

Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 ripe banana
  • 1 cup rolled oats
  • 2 large eggs
  • 3 tablespoons almond milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • cooking spray

For serving: maple syrup, chopped bananas, blueberries

      These look amazing!! Can’t wait to try them… question though, is the macros listed for 2 servings or just one serving? Cal 327 carbs 49g protein 16g etc…. it’s lists serves 2 but I don’t see a specification if it is per serving?

      1. Thanks. So depending on the size of the pancakes you make. it should make 6-8. If you make 6 pancakes with the batter then the serving size would be 3 pancakes

        the recipe should make about 6 medium-sized pancakes. The values would be for half of that. It serves 2

      These pancakes are amazing … very easy to make and extremely tasty. This recipe does not break the calorie bank and they were eep you full for hours. I always have frozen bananas and blueberries in my freezer so an easy go to meal. I find frozen bananas thawed worked better. The blueberries I only partially thawed and the ime on the griddle warmed them the rest of the way. I make these in my smoothie cup blender which means easy clean up. I have made these 3 times now. My husband keeps asking for them … this is the guy that I cannot get him to eat yogurt!!! This recipe could easily be halved for a single portion of pancakes.
