Recipe notes and tips

  • Use any tomatoes. I highly recommend using cherry or grape tomatoes. They are sweet, crunchy, and perfect for this salad.
  • Oil: I used olive oil but other oils like grapeseed oil or avocado oil will work
  • Vinegar: I used red wine, but you may use white or balsamic.
  • Use fresh garlic and not garlic powder
  • Fresh parsley is preferred but if in a pinch use dried parsley
  • Try to use fresh tomatoes. They tend to be crunchy and not mushy and soft
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • You may make this tomato salad ahead and store the dressing separately.

Frequently asked questions

What do you do with lots of fresh tomatoes?

The first thing that comes to mind is to make a nice homemade tomato sauce for pasta. I have a nice Homemade Marinara sauce recipe to check out. Also, you can make this Homemade roasted Tomato soup! Another option is to make tomato salad! Try this mozzarella tomato salad recipe. It’s amazing.

Can you freeze tomatoes?

Technically yes, you can freeze tomatoes to use later in sauces and soups. You should not use frozen tomatoes in salads because once they are thawed they will be mushy and not crunchy. Not ideal for salads.

What is the best way to preserve fresh tomatoes?

The best and easiest way to preserve fresh tomatoes is to freeze them in ziplock bags. Once frozen, they are not ideal to use in salads but perfect to add them to soups and make sauces with them.

How to store Tomato Salad?

Place your leftover tomato salad in an airtight container in the fridge for up to 4 days. You may store the dressing separately if you aren’t ready to serve.

I loved this recipe . I used both orange and red cherry tomatoes and after I plated it I squirted some fresh lemon juice on top as I would rather not use salt. Definitely going to write this down in my recipe book, five star quality
