Easy tomato salad with mozzarella pearls tossed in with a delicious citrus herb dressing. Simple, tasty, and the perfect side dish or appetizer for any gathering.
1 1/2poundsgrape tomatoes or cherry tomatoeshalved
8ouncesmini mozzarella balls
Dressing:
1/4cupextra virgin olive oil
3tablespoonsred wine vinegaror balsamic vinegar
1garlic cloveminced
2teaspoonshoney
1/4cupfresh parsleychopped
1/2teaspoondried oregano
Kosher salt and ground pepperto taste
Instructions
Wash and chop the tomatoes, prepare the ingredients, and have them ready.
To a small jar, add all the dressing ingredients and shake vigorously to emulsify. (1/4 cup extra virgin olive oil, 3 tablespoons red wine vinegar, 1 garlic clove, 2 teaspoons honey, 1/4 cup fresh parsley, 1/2 teaspoon dried oregano, and Kosher salt and ground pepper)
In a medium bowl, add the halved 1 1/2 pounds grape tomatoes or cherry tomatoes and 8 ounces mini mozzarella balls.
Drizzle with the prepared dressing and toss to combine.
Refrigerate for at least 15 minutes to allow the flavors to meld.

Notes
Use any tomatoes. I highly recommend using cherry or grape tomatoes. They are sweet, crunchy, and perfect for this salad.
Oil: I used olive oil, but other oils like grapeseed oil or avocado oil will work
Vinegar: I used red wine, but you may use white or balsamic.
Use fresh garlic and not garlic powder
Fresh parsley is preferred, but if in a pinch, use dried parsley
