Ingredients you will need

Fresh lemon juice
Extra virgin olive oil
Garlic cloves
Salt and ground black pepper
Skinless, boneless chicken breast halves
Zucchini

How to make this grilled chicken

  • Marinade the chicken: In a small mixing bowl, combine lemon juice, olive oil, garlic, salt, and black pepper. Add chicken breast to a Ziploc bag and pour over the lemony marinade; seal the bag and gently press the marinade around the chicken to evenly coat. Refrigerate and let marinate for at least 30 minutes.

  • Prepare zucchini: Meanwhile thoroughly wash the zucchini and pat the excess moisture with a paper towel. Using a sharp knife cut off the ends. Now simply, make diagonal cuts across the zucchini to get 1/2 inch-thick pieces.
  • Get the grill ready: Spray the grill with some cooking spray and preheat to medium-high heat. Remove the chicken from the marinade and place it onto the preheated grill along with zucchini slices.
  • Grill the chicken: Grill the chicken breast for 6 minutes on each side or until a thermometer inserted reads 165F. Zucchini will cook pretty fast, it should take no longer than 5 minutes to get nicely charred and tender. Once done, remove from the grill and serve hot.
