Simple Grilled Chicken made with a super delicious Mango Salsa recipe. Tender and juicy chicken that pairs so well with the salsa and makes for a perfect weeknight dinner served with rice or tortillas.

All my kids love chicken so we have no issues there and when I served this mango salad with this grilled chicken they were all blown away. They like it best when I serve them in a bowl with rice and sliced avocados.

This recipe will also work well for those who are preparing meals. It is truly easy to put together and o flavorful.

Ingredients needed

Below is a list of ingredients you will need to make this recipe. Full measurements are listed further down in the recipe card.

  • 4 thin boneless skinless chicken breasts
  • Olive oil: or avocado oil
  • Chili powder
  • Salt to taste
  • Mango: Fresh works best
  • Ripe avocado
  • Lime
  • Red bell pepper
  • Cilantro

How to make it

Heat a grill over medium-high heat.

  • Prepare the chicken: Drizzle the olive oil over the chicken breasts and sprinkle with the chili powder and salt to taste.
  • Cook the chicken: Grill for 4-5 minutes on each side or until cooked through.
  • Make the salsa: While the chicken is cooking, combine the mango, avocado, red bell pepper, and cilantro in a bowl. Stir in the lime juice and salt to taste.
  • Serve: Spoon the salsa over the chicken and serve.

Tips from my kitchen

  • Make sure the avocado and mango are both rice for the bets flavor.
  • Use fresh cilantro if possible. Frozen won’t taste the same.
  • Swap the chicken breast with boneless and skinless chicken thighs.
  • Do not overcook the chicken or else they will get dry and rubbery. The best way to check if the chicken is done is to use a food thermometer and check when the chicken reaches an internal temperature of 165F.

Don’t like chicken? Use steaks, salmon, or shrimp. The cooking time will vary.

Can I replace the mango with pineapple?

Yes. If you do not like mango, you can replace it with pineapple, peach, or strawberry.

Spiced grilled chicken breasts topped with a sweet and tangy mango avocado salsa. Easy to make and ready in less than 30 minutes.

Ingredients

  • 4 thin boneless skinless chicken breasts
  • 2 teaspoons olive oil, or avocado oil
  • 2 teaspoons chili powder
  • salt to taste
  • 1 cup diced mango
  • 1 cup diced avocado
  • 1 lime, juiced
  • 1/2 cup minced red bell pepper
  • 1/4 cup chopped cilantro

Instructions

  • Combine the 1 cup diced mango, 1 cup diced avocado, 1/2 cup minced red bell pepper, and 1/4 cup chopped cilantro in a bowl. Stir in 1 lime and salt to taste. Set aside.
  • Heat a grill over medium-high heat. Drizzle the 2 teaspoons olive oil over the 4 thin boneless skinless chicken breasts and sprinkle with the 2 teaspoons chili powder and salt to taste.
  • Grill for 4-5 minutes on each side or until cooked through.
  • Spoon the salsa over the chicken and serve.

  • You may use boneless and skinless chicken breasts.
  • Swap the mango with pineapple or peaches.
  • Store leftovers in a sealed container in the fridge for up to 3 days.

    I love avocados , the chicken with avocado salsa is delicious but in stead of mango I put cherry tomatoes.
    I eat a lot of mango at breakfast or any time, my problem is I prefer fruits with fruits and veg. with veg .

    I recently made your Chicken pasta salad…yum and I just printed your Healthy Broccoli Cheddar Soup…for later. Right now it is 85 F in Hamilton, Ontario Canada.
    I do want to try your mango salsa chicken but I am not fond of Avocado! Can you help with a a replacement.
    I do like your recipes…don’t have to go to great expense for the ingredients.
