How to make it

- Make the salsa: While the chicken is cooking, combine the mango, avocado, red bell pepper, and cilantro in a bowl. Stir in the lime juice and salt to taste.
- Serve: Spoon the salsa over the chicken and serve.

Tips from my kitchen
- Make sure the avocado and mango are both rice for the bets flavor.
- Use fresh cilantro if possible. Frozen won’t taste the same.
- Swap the chicken breast with boneless and skinless chicken thighs.
- Do not overcook the chicken or else they will get dry and rubbery. The best way to check if the chicken is done is to use a food thermometer and check when the chicken reaches an internal temperature of 165F.
