These juicy and tender chicken kabobs are made with chunks of chicken breast, rep peppers, onions, and pineapples. Marinated in a homemade tangy and sweet marinade and grilled to perfection. This grilled chicken kabob recipe can be prepared ahead of time and ready in just 30 minutes. Serve it with a side of brown rice, quinoa, cauliflower rice, or more grilled veggies. They will also be great to add over salads. This pineapple chicken recipe will be perfect for your next cookout!

Ingredients you will need

For the pineapple chicken marinade:

Ketchup
Honey
Low-sodium soy sauce
Orange or pineapple juice
Olive oil, divided, plus more for brushing grill
Rice vinegar
Garlic cloves
Minced ginger
Sesame oil
Salt and freshly ground black pepper

For the Kabobs (kebabs):

Boneless, skinless chicken breast
Fresh cubed pineapple (about 3/4 of 3 lb pineapple)
Large red peppers
Red onion

How to make these Chicken Kabobs

  • First, soak 10 wooden skewer sticks in the water for about 1 hour.
  • Next, make the marinade: In a large mixing bowl, add all marinade ingredients. Whisk until well combined.
    Place the chicken breast into a large Ziploc bag or in an air-tight container. Reserve 1/2 cup of the marinade for brushing and pour the rest over the chicken. Seal the bag and gently move the chicken around until evenly coated.
  • Marinate the chicken: Refrigerate and let marinate for at least an hour.
  • Prepare the chicken skewers: Meanwhile cut the pineapple, pepper, and onion into cubes. Drizzle remaining 2 tablespoons of olive oil over the veggies. Season with some salt and pepper, toss until well coated. Next, thread the chicken, cubed pineapple, red peppers, and onion onto the skewers.
  • Grill the chicken kabobs: Brush the grill with some oil and preheat over medium-high heat.
    Place the skewers onto the preheated grill. Next, brush the skewers with reserved marinade and grill for 5 minutes, then flip and brush again with the marinade. Cook for another 5-7 minutes more or until chicken is cooked through.
  • Finally, serve warm with the leftover marinade.

FAQ’s and tips

  • Makes about 10 skewers. Serving size is 2 skewers
  • You may substitute honey with maple syrup
  • Any oil will work.
  • You can make this recipe ahead like the day before, add in a bowl or ziplock bag, and grill the next day when ready.
  • Use shrimp instead of chicken if you prefer.
  • Place leftovers in a container and store in the fridge for up to 4-5 days. Reheat in the microwave when ready to eat. You can freeze for up to 2 months.

can you bake pineapple chicken kabobs instead

Don’t have an outdoor grill? You can bake these in the oven at 375 F for 20-25 mins and turning the chicken skewers to the other side halfway through. Another option would be to use a pan grill and grill it on your stovetop.  If cooking on your stovetop, cook for 3-4 minutes on each side over medium heat.

How to store chicken kabobs

There are a couple of ways to store the chicken kabobs. One way would be to remove them from the skewers and place them in a tightly sealed container and then store them in the fridge. Another option would be to leave them on the skewers and tightly wrap with a plastic wrap. Then wrap again with foil and storing in the fridge.

Can you make chicken kabobs ahead

You can make the chicken kabobs a day ahead. Meaning, you may marinate the chicken and place it in a bowl and store it in the fridge till the next day. Add them on the skewers along with the pineapple, peppers, and onions.

Ingredients

Marinade:

  • 1/3 cup ketchup low sugar
