As a certified nutrition coach and mom of five, fajitas are one of my favorite meals to make when I need something easy, filling, and customizable. Everyone can build their own plate with their favorite toppings, which makes dinnertime a lot easier. Plus, they’re packed with lean protein and vegetables, making them a balanced meal that comes together in under 30 minutes.

I wanted to make a creamy version of chicken fajitas because my kids like it with spaghetti so I figured why not. For a more simple and tradition chicken fajitas you may want to checkout my sheet pan chicken fajitas or my crockpot chicken fajitas.

Key Ingredients

Below are the key ingredients needed to make this dish. Full measurements are listed further down in the recipe card.

Ingredients for creamy chicken fajitas.
  • Chicken Breasts: Boneless skinless chicken breasts provide a lean source of protein and cook quickly when sliced into strips.
  • Cornstarch: A small amount of cornstarch helps the chicken develop a light golden coating and also helps thicken the sauce.
  • Fajita Seasoning: The fajita seasoning gives the chicken and vegetables their signature smoky, savory flavor.
  • Bell Peppers: A variety of colorful bell peppers adds sweetness, texture, and color to the dish.
  • Onion: Sliced onions become tender as they cook and add classic fajita flavor.
  • Chicken Broth: Chicken broth helps create the creamy sauce while adding extra flavor.
  • Cream Cheese: Cream cheese creates a rich, creamy texture and helps bring the sauce together.
  • Mozzarella Cheese: Mozzarella melts beautifully over the fajita mixture and adds a delicious cheesy finish.
  • Fresh Cilantro and Lime: Fresh cilantro and lime juice brighten the rich flavors and add freshness to every bite.

Common Mistakes to Avoid

  • Overcooking the Chicken: Chicken strips cook quickly, so avoid leaving them in the pan too long.
  • Adding Cold Cream Cheese: Allow the cream cheese to soften slightly before adding it to help it melt smoothly.
  • Overcooking the Peppers: The peppers should still have a slight bite for the best texture.
  • Skipping the Lime: Fresh lime juice adds brightness and balances the richness of the creamy sauce.

How to Make Creamy Chicken Fajita

  • Season the chicken: First, slice the chicken breasts into one and a half-inch strips. Next, coat the chicken strips with the cornstarch, then be sure to evenly coat them with half of the fajita seasoning. After that, sprinkle salt and pepper over the chicken.
  • Cook the chicken and vegetables: Next, heat the olive oil in a large skillet over medium heat. Then, place the seasoned chicken strips into the oil and cook on both sides until golden. Next, add the sliced bell peppers to the skillet along with the sliced onions, then add the remainder of the fajita seasoning. Stir until combined.

  • Simmer the peppers: Next, add the chicken broth into the pan with the rest of the ingredients and reduce to simmer. Simmer on low and cover the pan to cook the bell peppers for a few minutes.
  • Add cheese: Finally, add cream cheese to the hot broth along with the shredded mozarella cheese. Meanwhile, cook everything over low heat until the cheese has melted and is a gooey texture.
  • Garnish and serve: Lastly, remove the creamy chicken fajitas skillet from the heat and top with fresh cilantro. Garnish with lime wedges and enjoy warm!

Variations

  • Use Chicken Thighs: Boneless skinless chicken thighs can be substituted for extra juicy chicken.
  • Add More Heat: Add diced jalapeños, cayenne pepper, or hot sauce for a spicier version.
  • Make It Low Carb: Serve over cauliflower rice or enjoy it as a skillet meal without tortillas.
  • Add More Vegetables: Mushrooms, zucchini, or poblano peppers are great additions.
  • Try Different Cheese: Monterey Jack, pepper jack, cheddar, or a Mexican cheese blend all work well.
