These Creamy Chicken Fajitas are a fun twist on the classic recipe. Tender chicken, colorful bell peppers, and onions are cooked in a creamy fajita sauce and finished with melted mozzarella for an easy one-pan dinner the whole family will love. It’s packed with flavor, comes together quickly, and is perfect served with tortillas, rice, or all on its own.

How to Make Creamy Chicken Fajita
- Season the chicken: First, slice the chicken breasts into one and a half-inch strips. Next, coat the chicken strips with the cornstarch, then be sure to evenly coat them with half of the fajita seasoning. After that, sprinkle salt and pepper over the chicken.
- Cook the chicken and vegetables: Next, heat the olive oil in a large skillet over medium heat. Then, place the seasoned chicken strips into the oil and cook on both sides until golden. Next, add the sliced bell peppers to the skillet along with the sliced onions, then add the remainder of the fajita seasoning. Stir until combined.

- Simmer the peppers: Next, add the chicken broth into the pan with the rest of the ingredients and reduce to simmer. Simmer on low and cover the pan to cook the bell peppers for a few minutes.
- Add cheese: Finally, add cream cheese to the hot broth along with the shredded mozarella cheese. Meanwhile, cook everything over low heat until the cheese has melted and is a gooey texture.
- Garnish and serve: Lastly, remove the creamy chicken fajitas skillet from the heat and top with fresh cilantro. Garnish with lime wedges and enjoy warm!

Creamy Chicken Fajitas (Easy One-Pan Dinner)

Ingredients
- 2 large boneless and skinless chicken breasts, sliced into strips
- 1 tablespoon cornstarch
- 2 tablespoons fajita seasoning, divided
- salt, season to taste
- pepper, season to taste
- 1 tablespoon avocado oil
- 3 bell peppers, various colors; cut into strips
- 1 medium onion, sliced
- 1 cup chicken broth
- 4 ounces cream cheese
- ½ cup mozzarella, shredded
- 2 tablespoons fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Sprinkle 2 large boneless and skinless chicken breasts with 1 tablespoon cornstarch, half of the 2 tablespoons fajita seasoning and salt and pepper. Stir to evenly coat the pieces.
- Heat 1 tablespoon avocado oil in large non-stick skillet over medium-high heat. Sear chicken until golden brown; stirring occasionally.

- Add in the 3 bell peppers, 1 medium onion and sprinkle with remaining seasoning.

- Stir in the 1 cup chicken broth and reduce the heat to a low. Cover the pan and cook for 5 minutes, or until the peppers just begin to soften.
- Stir in the 4 ounces cream cheese. Sprinkle with ½ cup mozzarella and continue to cook over low heat until melty.

- Garnish with 2 tablespoons fresh cilantro and serve with 1 lime wedges.
