Cheesy Broccoli Stuffed Chicken Breast
Ingredients
- 1.5 lbs Boneless skinless chicken breasts or 4 large breasts
- Salt and pepper, to taste
- 1 Tbsp Olive Oil
- 1 Tsp Garlic Powder divided
- ½ Tsp Paprika
- 1 Tbsp Italian Seasoning
- 1 Cup Small chopped broccoli florets
- 1 Cup Shredded Cheddar Cheese
- ¼ Cup Cream Cheese
Instructions
- Preheat your oven to 375F.
- Place the chicken on a chopping board and using a sharp knife, slice through the middle to create a pocket for the stuffing.
- Repeat with all the chicken breasts, then season with salt, pepper, paprika and Italian seasoning on all sides.
- In a mixing bowl, combine broccoli with shredded cheese, garlic powder, and cream cheese. season with a pinch of salt and pepper. Spoon the mixture into the chicken breasts, and secure the pocket using toothpicks.
- Heat oil in a large, ovenproof skillet over medium-high heat. Add the chicken and sear for 2-3 minutes on each side, then transfer to the oven and bake for additional 15-17 minutes.
- A meat thermometer inserted in the middle of the chicken should read 165F. Enjoy!

Hi Sarah, you could steam them a bit but it’s not necessary. They will be cooked in with the chicken.

Is this “healthy” because it has broccoli? Is it considered “healthy” because it’s “low-carb”? I don’t believe cream cheese and cheddar cheese are considered health foods lol. I guess since Keto is the new thing, anything is healthy so long as it isn’t bread?

This is healthy even if it isn’t Leto. You could use low fat cheese and I personally used whipped cream cheese to save on calories. It isn’t a huge amount even if you don’t use those options.

The written recipe doesn’t say where to use the garlic powder. The video shows it in the cheese/brocolli mixture so that’s what I’m going to do. I hope it turns out ok.

Hey! so every oven is different. The estimate is 17-20 minutes in the oven. To be sure you can use a thermometer until it reaches 165.

I cooked this recipe exactly as written and it was amazing!! I did have to cook it at 375 degrees for about 30 minutes to get the chicken to 165 degrees. It was probably the best chicken I have ever cooked.

Same temperature. Not much changed other than maybe adding another 5 minutes to the cooking time. Make sure the chicken is browned and cooked through.
