Easy Healthy Double Chocolate Brownies

Everyone will want these brownies because they are very tempting. Just saying, it’ll be hard to be on a diet with these in the room. With one bite of these Healthy double chocolate brownies, you’ll be hooked. You’re taking very fine ingredients and making one dessert that will make you the winner of the day. People will start looking at you like you’re a hero.

In all seriousness, these Healthy Double Chocolate Brownies are heavenly, so don’t delay in making them. You can’t really mess up these brownies. They are rather fairly simple to make. Get your friends or kids involved in helping you make these. It’ll be a good old brownie making time. Make sure some of these brownies make it to the oven though, even the brownie batter is enticing.

HOW TO MAKE CHOCOLATE BROWNIES

  • Preheat oven to 325F and prepare an 8×8 inch baking pan with parchment paper.
  • MIX dry ingredients: In a small bowl, stir together the flours, cocoa powder, salt, baking soda, and baking powder until combined.
  • Place the dry ingredients into a mixer and add in the melted coconut oil, egg, egg yolk, and pumpkin puree. Using a paddle attachment, mix until a dough forms.
  • Press the dough evenly into the bottom of the prepared pan. Bake for 6-8 minutes.
  • Once cooled, stir together the cocoa powder, coconut oil, and maple syrup until combined then add in the almond milk to make the ganache. Use a rubber spatula to evenly spread the chocolate over the brownies.
  • Sprinkle with crushed nuts and place in the freezer for 20 minutes to firm up before serving. Store in an airtight container in the fridge.

How to store chocolate Brownies

You may store brownies in a tightly sealed container and place it in the fridge for 7-10 days. Freeze for up to 2 months and allow it to thaw before eating.

What type of cocoa powder to use for brownies

Any unsweetened cocoa powder will work for these easy to make chocolate brownies. But our favorite kind is Hershey’s.

Can brown sugar be used in brownies

Brown sugar works just fine in brownies, as well as cane sugar. We used granulated stevia for this recipe.

Does freezing ruin brownies

It is completely safe and ok to freeze brownies and eat when ready. Just like any other baked goods, you can simply reheat the brownies if you like them warm or allow it to thaw in the fridge.

Healthy double chocolate brownies
These double chocolate brownies are rich in chocolate and made with healthier ingredients

Ingredients

  • 3/4 cup brown rice flour or oat flour
  • 1/2 cup almond flour, finely ground
  • 3 tbsp granulated stevia
  • 2 tbsp coconut oil, melted
  • 2 1/2 tbsp unsweetened cocoa powder
  • 1 egg, room temp
  • 1 egg yolk room temp
  • 2 tbsp pumpkin puree
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Ganache

  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tbsp unsweetened almond milk

Topping

  • Crushed pecans or walnuts
