These Starbucks Copycat Egg White Bites are soft, cheesy, and loaded with protein. They’re perfect for meal prep and come together in under 30 minutes, which is always a win on those crazy mornings.

I’ve always loved those Starbucks egg white bites. They feel healthy but still taste amazing. But buying them every morning? No thanks. After testing a few versions at home, this one totally nailed it. They’re light, fluffy (shoutout to cottage cheese!), and full of flavor from the roasted red peppers and green onions. Plus, I can make a whole batch in under 30 minutes and have breakfast prepared for the week!

Before You Get Started

Keep these simple tricks in mind for the best results:

  • Use silicone muffin cups or a silicone muffin pan for easy removal. These bites can stick to metal tins.
  • Whisk the egg whites and cottage cheese well for the best texture. You can use an immersion blender if whisking feels like arm day!
  • Dice the peppers and onions finely so they cook quickly and spread evenly throughout each bite.
  • Let the bites cool for a few minutes before removing them from the cups to help them hold their shape.

  • Egg whites: around 1⅔ cups egg whites. You can also use store-bought egg whites.
  • Cottage cheese: You may use 2% or 4 % fat cottage cheese. I like the good culture brand.
  • Garlic salt and pepper to taste
  • Sweet pepper: or any bell pepper of your choice. I prefer red for this recipe.
  • Green onions: Fresh green onions will taste best, or you can use fresh chives.
  • Shredded cheddar cheese: Other cheeses will work, like grated parmesan.

How to Make Starbucks Copycat Egg White Bites

Here’s how to get perfect results every time:

1️⃣ Prep the Oven and Egg Mixture

Preheat the oven to 350°F. In a medium bowl, add the egg whites, cottage cheese, garlic salt, and black pepper. Whisk well until thoroughly combined and slightly airy.

2️⃣ Add the Veggies and Cheese

Stir in the diced sweet pepper, sliced green onions, and shredded cheddar cheese.

3️⃣ Fill the Silicone Cups

Divide the mixture evenly into eight silicone muffin cups. Silicone makes it much easier to remove the egg bites after baking.

✏️ If you don’t have silicone cups, lightly grease a muffin tin to help prevent sticking.

4️⃣ Bake and Cool

Bake for 20-25 minutes, or until the egg bites are set in the center. Let them cool completely before removing from the silicone cups.

Common Questions

Can I use carton egg whites instead of separating whole eggs?

Yep! I do it all the time. Just measure out about 1 ⅔ cups, and you’re good to go.

Are these egg white bites healthier than Starbucks’ version?

Definitely, you skip the preservatives, keep the protein, and control exactly what goes into them.

Can I make these without cottage cheese?

You can, but they won’t be quite as creamy or protein-rich. Greek yogurt works well and keeps the protein content similar, while ricotta offers a great texture but lowers the protein content slightly.

  • Add cooked turkey sausage or bacon bits for a protein boost that’s still quick and easy.

Ingredients

  • 8 large egg whites, around 1⅔ cup egg whites
  • cup cottage cheese
  • Garlic salt and pepper, to taste
  • ¼ cup finely diced sweet pepper
  • 2 green onions, thinly sliced
  • ¼ cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350 F. In a medium bowl, add the 8 large egg whites, ⅓ cup cottage cheese, Garlic salt and pepper Whisk well until combined.
