How to make this grilled chicken breast recipe

  • First, make the marinade and marinate the chicken: To a large bowl, add all the marinade ingredients and mix well to combine. Add in the chicken and mix to get the pieces coated on all sides. Cover and allow it to marinate into the fridge for up to 1 hour.

  • 1 1/2 pounds boneless skinless chicken breasts , or 4 chicken breasts

Marinade:

  • 2-3 garlic cloves, minced
  • 2 tbsp olive oil
  • ¼ cup cilantro, finely chopped
  • 1 lime, juice, and zest
  • 1/2 tsp ground cumin
  • ½ tsp smoked paprika
  • Kosher salt and black pepper, to taste

Avocado Salsa

  • 2 small ripe but firm avocados, or 1 large, diced
  • 1 large tomato, chopped
  • 1 small red onion, diced
  • 1 jalapeno, seeded and chopped
  • 1/4 cup cilantro, finely chopped
  • 1 lime, juiced
  • Kosher salt and black pepper, to taste
