How to Make This Chicken Skillet Recipe

- 1 pound chicken breast boneless; skinless

- 3 shallots finely chopped
- 2 garlic cloves
- 1 cup chicken broth low sodium
- 4 ounces cream cheese
- 1 chipotle pepper in adobo sauce; finely chopped
- 1 tablespoon fresh cilantro finely chopped; more for garnishment
- lime wedges for serving
Instructions
- Heat the oil in a large skillet over medium heat.
- Season the chicken with salt and pepper and cook it for 6-8 minutes per side, or until brown and no longer pink in the center. Set aside.
- To the same preheated skillet, add the shallots and garlic. Saute for 3-4 minutes, or until the onion has softened.
- Pour the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for 4-6 minutes, or until reduced by half.
- Stir in the cream cheese and chipotle pepper. Whisk well to obtain a creamy sauce.
- Return the chicken to the pan and cook for 4-6 minutes more, or until the sauce is bubbly and the chicken is heated through.
