Who doesn’t love pasta? It’s one of those comforting meals that can be quick to put together when you only have a limited amount of time on hand to make dinner. This healthy chicken and artichoke pasta recipe is so easy and ready in just 30 minutes. Made with lean chicken breast seasoning with garlic salt and pepper, fresh garlic, and cooked with Boursin cheese instead of any heavy or whipping cream. The Boursin cheese can easily be swapped with lite coconut milk, or lite cream cheese.

Ingredients you will need

  • Chicken breast: you may also use boneless and skinless chicken thighs
  • Garlic salt and pepper, to taste
  • Olive oil: avocado oil or another neutral oil will work
  • Garlic cloves: use fresh garlic cloves instead of garlic powder for best taste.
  • Pasta of choice: a more healthier pasta would be lentil or chickpea pasta. Cook according to package directions
  • Boursin cheese: if you have cream cheese on hand you may use that instead.
  • Artichoke hearts: these are the ones you get in jars that are either in water or oil.

How to make chicken Artichoke Pasta

  • Cook the pasta according to the package directions. Once cooked to al dente, reserve 1 1/2 cups of the pasta water, then drain.

  • Slice the chicken and season with garlic salt and pepper. Heat the oil in a large skillet and cook the chicken until golden-brown and cooked through.

  • Next, add the garlic and cook for 1 minute more. Add the pasta water and Boursin cheese. Stir until the sauce is creamy.
  • Finally, add the artichokes, and cooked pasta and combine them with the sauce.

Recipe notes and Tips

  • Use any pasta of your choice. Short Pastas work great and you may use lentil or chickpea pasta.
  • Do not overcook the pasta. Cook it al-dente, because the pasta will continue to cook even after you remove it from the boiling water.
  • Try not to overcook the chicken so it doesn’t come out dry. You may also swap the chicken with other types of protein like shrimp.
  • Add in more veggies if you can. If you do not like artichokes, either skip it or add a different type of veggie like broccoli or zucchini.
  • It is not a must to use Boursin Cheese. I just love it because of the added seasonings they come with. You may use lite cream cheese.
  • Don’t want to cook the chicken from scratch and you want to use rotisserie chicken you can.

Yes. Canned artichokes are as healthy as fresh artichokes. If you prefer to cook artichokes fresh then you can. It is best to steam them and remove the other hard layers.

Do you rinse jarred artichokes?

Jarred artichokes are packed in water that has salt and citric acid to help preserve them. We would recommend rinsing the artichokes if possible before consuming or using them in a recipe.

Are artichokes better in water or oil?

I would prefer using artichokes that are packed in water. Artichoke hearts packed in oil will have more fats compared to the ones that are packed in water. So if you are watching your fat intake, it would be best to buy the ones packed in water.

Storing and Reheating

  • Storing: Store the leftover pasta in a container in the fridge for up to 3 days. You can store in a freezer-safe container and freeze it for up to 3 months.
  • Reheating: Reheat your leftovers in the microwave for 60-90 seconds or until it is heated through.

Ingredients

  • 1 lb chicken breast, sliced
