These Garlic Oven-Roasted Green Beans are a quick and flavorful side dish that pairs with almost any meal. Fresh green beans are tossed with olive oil, garlic, and simple seasonings, then roasted until tender with slightly crispy edges.

Roasted green beans are one of my go-to sides when I need something simple but still flavorful. I make these often because they take almost no prep and cook quickly in the oven. The garlic adds great flavor, and roasting brings out the green beans’ natural sweetness. It’s an easy vegetable side that even picky eaters usually enjoy. This is so easy to make and is ready in just 30 minutes.

Recipe Overview
Ingredients you will need
To make these garlic-roasted green beans, you will need the following ingredients. Full measurements are listed further down below.

- Avocado oil, or any other oil of choice, like olive oil
- Garlic cloves: use fresh garlic instead of garlic powder
- Fresh green beans or frozen green beans. See instructions
- Kosher salt and ground pepper
- Italian seasoning, or any other seasoning of choice, like lemon pepper.
- Parmesan cheese: you may use shredded Romano Cheese instead
- Lemon wedges and fresh parsley- to garnish
Recipe Tips
- Use fresh green beans: They work best for roasting because they retain their texture and flavor. If you decide to use frozen, thaw them first and dry them well.
- Dry them well: If you rinse your beans, make sure they are completely dry so they roast instead of steaming.
- Don’t overcrowd the pan: Spread the beans in a single layer so they roast evenly and get slightly crispy.
- Add garlic at the right time: If your garlic burns easily, you can add it halfway through roasting.
- Finish with lemon or parmesan: A squeeze of fresh lemon juice or a sprinkle of parmesan cheese at the end adds extra flavor.
How To Make Roasted Garlic Green Beans
- If using fresh beans: Bring a large pot of salted water to a boil. Pre-cook green beans for 2 minutes, then soak into ice-cold water. Drain very well, and pat dry with a paper towel.
- If using frozen beans, place them in a microwave-safe container. Add ¼ cup of water and cover with a (microwave-safe) lid. Microwave for 45 sec to 1 min, until green beans are thawed. Remove from the microwave. The beans should be thawed but not hot. Drain very well, and pat dry with a paper towel.

- Preheat the oven to 425 F and line an extra-large baking sheet with parchment paper. Add in the beans.
- Pour the olive oil over the beans, add the garlic, seasonings, Parmesan cheese, and toss well to combine; Arrange in a single layer.
- Bake for 15-20 minutes, or until the green beans are crisp-tender.
- Garnish with freshly chopped parsley and serve with lemon wedges.

What to Serve with Roasted Green Beans
Usually, during the holidays, these roasted parmesan green beans are paired with a roasted turkey breast or cranberry-roasted chicken for the entire family to enjoy.
However, if you are not serving these around the holidays but just for your family’s dinner, then you can pair them with an array of dishes.
You could pair them with pan-seared salmon or garlic shrimp pasta for your main course, or enjoy them with a baked Teriyaki chicken breast.
Common Questions
Green beans typically roast at 400°F for 15–20 minutes, depending on how tender or crispy you prefer them. Ovens vary as well, so anywhere between that time works.
No. Fresh green beans can go straight into the oven after trimming and seasoning.
The best way to reheat this dish while keeping its texture and flavor is to use a standard oven or a toaster oven. This way, you can still keep the crispiness. It should not take more than a few minutes for the dish to reheat to its former glory.
Fresh beans work best for roasting. Frozen green beans tend to release too much moisture and may become soft.

Storage and Reheating
- Storing: Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheating: Reheat them in the oven or an air fryer for a few minutes to restore their texture.
- Freezing: I do not recommend freezing leftovers.
