Garlic Herbed Red Potatoes
Ingredients
- 2 pounds baby potatoes , red
- water, enough to cover the potatoes in a pot
- ½ tablespoon salt , plus more to taste
- 1 teasapoon garlic powder, or 3-4 pressed fresh garlic cloves
- ½ teaspoon onion powder, or one shallot, grated
- 1 teaspoon celery salt
- 2 tablespoons fresh parsley, finely chopped
- 2-3 green onions, finely sliced
- 1 ½ tablespoons olive oil, or any other kind of neutral plant oil
Instructions
- Place the potatoes in a large pot and fill with water just enough to cover them by an inch. Add in ½ tablespoons of salt.
- Simmer over medium heat until the potatoes are fork-tender, but not mushy.
- Drain and while still hot stir in the seasonings together with the parsley, onion, and oil. Gently toss the potatoes to avoid crushing them.
- Transfer to a large serving bowl.
- Serve warm or cool.
