Ever since I made these Cottage Cheese Waffles, I’ve been hooked. They are so simple and easy to make with a handful of ingredients. High in protein from the cottage cheese, and the perfect breakfast to kickstart your day.

My kids love waffles. I make either waffles or pancakes every Sunday because it is something they always look forward to. These waffles are a hit, and the added cottage cheese for a high protein boost makes it well worth it. You only need a handful of ingredients and some cottage cheese to make these soft and fluffy waffles.

- Cottage cheese
- Eggs
- Vanilla extract
- Honey: maple syrup or agave will work too
- Milk of choice: I like using 2%
- Vegetable oil: or coconut oil
- All-purpose flour: Other flours will work, like oat flour.
- Baking powder
- Fresh fruits of choice for topping
How to make cottage cheese waffles

Step 1: In a blender or food processor, add the first 6 ingredients and blend until
smooth.

Step 2: In a large jug or bowl, mix the flour with baking powder. Pour the blended cottage cheese mixture over the flour in the jug, and whisk until combined.

Step 3: Preheat a waffle maker until the green light is on. Add about 1/4 cupful of
batter per waffle (adjust to the size of your waffle maker).

Step 4: cook for 3-5 minutes, or until the green lights turn on. Serve with fresh fruits and enjoy!

Tips from my kitchen
- Low-fat cottage cheese works well, but full-fat will give a richer and better texture.
- I like to let the batter sit for 5 minutes to help the flour hydrate and get a fluffier waffle.
- Don’t overmix the batter. Mix until just combined.
- Even if the waffle maker is non-stick, don’t forget to grease it with cooking spray.
- Don’t rush it. Cook until golden brown.
- Best served warm.
Customize it
There are many different ways to customize these waffles to make it your own. Here are some ideas that you may want to try.
- Add some cinnamon for a hint of warm flavor.
- Like chocolate? Add in some chocolate chips or add 2 tablespoons of cocoa powder to the flour mixture to make it fully chocolate.
- Add some fresh or frozen blueberries.
- For savory waffles, skip the honey and try adding chives, garlic powder, or even shredded cheese!

Place leftover waffles in a container in the fridge for up to 4 days.
Yes. They can be frozen for up to 3 months.
You can use oat flour, whole wheat flour, or gluten-free flour. I haven’t tested it with almond flour. If you are going to use almond flour, you may need to add 2 more eggs to serve as a binder since almond flour is dense and the cottage cheese retains a lot of moisture.
Yes. You can use coconut oil instead of vegetable oil.

Hi, is the nutrition information for the full batch of waffles or per single waffle? They are delicious 🙂
It should make 12 waffles, so it’s per serving, which will be 3 waffles.
