In a blender or food processor, add the first 6 ingredients and blend until smooth. (1 cup cottage cheese, 2 large eggs, 2 teaspoons vanilla extract, 3 tablespoons honey, 1/3 cup milk of choice, and 1 tablespoon vegetable oil)
In a large jug, mix the 1 cup all-purpose flour with 1 tsp baking powder. Pour the blended cottage cheese mixture over the flour in the jug, and whisk until combined.
Preheat a waffle maker until the green light is on. Add about 1/4 cupful of batter per waffle (adjust to the size of your waffle maker) and cook for 3-5 minutes, or until the green lights turn on.
Serve with fresh fruits of choice and enjoy!
