Ingredients needed

  • For the avocado spread: A combination of mashed avocado, lime juice, garlic, mayonnaise, and chili flakes is spread over the tortilla before adding the chicken salad ingredients.
  • Chicken: To add a major protein boost to these pinwheels, they are filled with plenty of shredded cooked chicken. Use rotisserie chicken for extra flavor.
  • Feta cheese: We love the flavor of crumbled feta cheese in this recipe, but feel free to swap it out for different varieties. Shredded cheddar cheese, a Mexican blend, Monterrey Jack, Colby, or Pepper Jack are all good choices.
  • Black olives: For a nice salty, savory taste. If you’re not a fan, simply omit it.
  • Red onion: Adds color, freshness, and a slightly spicy flavor.
  • Fresh parsley: A small amount of fresh parsley for a peppery taste. Feel free to use any favorite herbs here.
  • Salt & pepper: To make all of the flavors pop.
  • Tortillas: You’ll want to use 4 large burrito-size tortillas to hold all of the delicious fillings.

How to make this pinwheel recipe

  1. Make the avocado mixture: Mash the avocado in a medium bowl. Add the lime juice, garlic, mayo, and chili flakes. Stir to combine. Take 2 spoonfuls of the mixture and spread it over one of the tortillas.
  1. Add chicken salad ingredients: Sprinkle it with chicken, feta cheese, olives, red onion, and parsley. Season with a pinch of salt and pepper. Repeat with the remaining tortillas.
  2. Roll & slice: Roll the tortillas tightly, then slice them into 1/2-inch slices.

How long can pinwheels sit out?

These are fine sitting out at room temperature for up to about 2 hours. Any longer than that, place them back in the fridge for 30 minutes before serving again.

How do you keep pinwheels from getting soggy?

To ensure these do not get soggy, dry the olives and red onion well before sprinkling them onto the tortilla.

Storage recommendations

Store any leftovers in an airtight container in the fridge for up to 2 days. We do not recommend freezing these rollups.

  • 1 ripe avocado
  • 1 lime, juiced
  • 1 garlic clove, pressed
  • 2 tbsp mayonnaise, lite, or greek yogurt
  • 1/2 tsp chili flakes
  • 1 1/2 cups shredded cooked chicken
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced black olives
  • 1/2 small red onion, finely diced
  • 2 tbsp fresh parsley, minced
  • Kosher salt and pepper, to taste
