They make for a perfect healthy breakfast with your morning coffee or even to have as a snack or dessert option.

HOW TO MAKE APPLE CINNAMON BREAD

Preheat the oven to 350F. Spray a 9×5-inch loaf pan with cooking spray, and set aside. Whisk together the flour, sugar, baking powder, baking soda, salt, and spices. Set aside.

In a large bowl whisk together eggs, coconut oil, coconut sugar, maple syrup, and vanilla. Add in greek yogurt and apple puree and mix until just combined.

Whisk in the oat flour and baking powder. Gently fold in the pecans, but careful not to over-mix.

Pour the batter into the prepared pan. Garnish with a few whole pecans the top of the loaf. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

Check it halfway through and cover with aluminum foil, if needed, to prevent browning too much. Allow it to cool before slicing and serving.

What apples are best for apple bread

We used only apple puree in this apple cinnamon bread recipe but if you would like to add some fresh apples the best ones to use would be Granny Smith apples. They are sweet and tarty at the same time and do well with baking. Chop them into smaller pieces or shred them using a grater, and add them in when mixing the eggs sugar and maple syrup. Adding fresh apples will make them extra moist.

Does apple bread freeze well

Absolutely. You can freeze apple bread for up to 3 months. Wrap either the whole bread or leftovers tightly with plastic wrap or aluminum foil and store in the freezer.

How do you defrost a loaf of bread

Remove the frozen loaf of bread and place it in the fridge to thaw the night before. Remove from plastic wrap and keep on the kitchen counter to reach room temperature. You can either cut a piece and reheat it in the microwave or you can bake the whole bread in the oven at 350 F again to reheat it and give it that fresh taste.

Ingredients

  • 2 Cups Oat Flour
  • 2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • a pinch of salt
  • 2 Tsp Ground Cinnamon
  • ½ Tsp Ground Ginger
  • ¼ Tsp Ground Nutmeg
  • 2 Large Eggs, at room temperature
  • ¼ Cup Coconut Oil
  • ½ Cup Coconut Sugar
  • Cup Maple Syrup
  • ½ Tbsp Vanilla Extract
  • ½ Cup Greek Yogurt
  • Cup Apple Puree
  • Cup Pecans, roughly chopped plus more to garnish

    Hello Rena,

    Thank you very much for your recipe.
    Should the baking powder and the baking soda weigh in Tbsp and not in Tsp?
    Just to make sure it is not a typo.
    The same applies for the vanilla extract
