If you are looking for recipes to make around springtime, when the weather starts to warm, you have come to the right place. As the weather gets warmer, I start craving light, fresh meals and use lots of herbs, and add fresh veggies when I can. These recipes are the kinds of meals I make when I want a quick, healthy, and family-friendly dinner that my whole family will enjoy.

  • Try not to overcook your vegetables: I like to keep fresh veggies a bit on the crispy side because they tend to be more flavorful.

  • Prep ahead when you can: Prepping ahead makes life easier for me. I like to chop veggies the day before if possible, and I also marinates my proteins the night before.

I feel like you do not have to be selective here. Some of my favorite protein options for spring are chicken, shrimp, salmon, and plant-based proteins, like tofu, which are great to serve for spring dinners.

Absolutely. Why not? Most spring dinners work great for meal prepping. Many of my recipes can be made ahead and stored for a few days, making them perfect for meal prepping any time of year.
