These Slow Cooker Chicken Thighs are tender, juicy, and coated in a sweet, smoky maple chipotle sauce. The chicken is slightly seared before going into the slow cooker, then cooked low and slow until tender and full of flavor.

Life can be hectic, and as a mom of five, I’m always looking for dinners that don’t require much work once the day gets busy. These slow cooker chicken thighs are one of those recipes I make earlier in the day and don’t have to think about again until dinner.

- Pure Maple Syrup: Maple syrup balances the heat from the chipotle peppers and gives the sauce a slightly sweet flavor.
- Apple Cider Vinegar: A little vinegar adds acidity and keeps the sauce from tasting too sweet.
- Soy Sauce: Soy sauce adds a savory, salty flavor to balance the maple syrup. Use tamari for a gluten-free option.
- Garlic: Fresh garlic adds another layer of flavor to the sauce. I like to grate it directly into the blender.
Tips for Success
- Don’t Skip the Sear: You don’t have to sear the chicken before slow cooking, but I recommend it. It adds a nice browned flavor and gives the chicken more color.
- Don’t Overcook the Chicken: Chicken thighs are forgiving, but they can still dry out if left in the slow cooker too long. Start checking them toward the lower end of the cooking time.
- Adjust the Spice Level: Start with one chipotle pepper for a milder sauce. Use two if you like more heat. You can also reduce the adobo sauce for an even milder version.
- Don’t Add Too Much Liquid: The chicken will release some juices as it cooks, so you don’t need to add more broth than the recipe calls for.
How to Make Slow Cooker Chicken Thighs
Season the Chicken: Place the chicken thighs in a large bowl. In a small bowl, mix together the cornstarch, smoked paprika, garlic powder, onion powder, salt, cumin, oregano, and black pepper. Sprinkle the seasoning over the chicken and toss well to coat.
Make the Maple Chipotle Sauce: Add the tomato paste, maple syrup, chipotle peppers and adobo sauce, chicken broth, apple cider vinegar, soy sauce, garlic, cumin, and smoked paprika to a blender. Blend until smooth. Pour a few tablespoons of the sauce over the seasoned chicken and toss again.

Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat.
Add the chicken thighs in a single layer, smooth side down. Cook for 3 to 4 minutes without moving them, until browned. Flip and cook for another 2 to 3 minutes.
You don’t need to cook the chicken through yet. The goal is simply to give it some color and extra flavor.
Slow Cook: Transfer the chicken to the slow cooker. Pour the remaining maple chipotle sauce around and over the chicken.
Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours, until the chicken is tender and reaches an internal temperature of at least 165°F.

Finish the Sauce: Stir the fresh lime juice into the sauce. Taste and adjust with a little more salt, maple syrup, or lime juice if needed.
Spoon the sauce over the chicken and garnish with sliced green onions and fresh cilantro or parsley.

Easy Variations
- Make it less spicy: Use one chipotle pepper and less adobo sauce. You can always add more heat later.
- Add More Citrus: Add extra fresh lime juice at the end for a brighter, tangier sauce.
- Use Honey: Use honey in place of maple syrup if that’s what you have.
- Add Vegetables: Serve the chicken with roasted broccoli, green beans, bell peppers, or zucchini for an easy complete dinner.
- Make It a Bowl: Serve the chicken and sauce over rice with black beans, corn, avocado, sliced green onions, and fresh cilantro.
What to Serve With Slow Cooker Chicken Thighs
The maple chipotle sauce is especially good over rice, so that’s my favorite way to serve this chicken. Try it with:
- White rice, Brown rice, or Quinoa
- Cilantro lime rice
- Black beans or Corn
- Roasted vegetables
- Green beans like this air fryer green beans or simple sauteed green beans
- Roasted broccoli with cauliflower
- Simple green salad like my spring mix salad
- Warm tortillas
Do I Have to Sear the Chicken First?
The quick answer is no, but I highly recommend it for the best flavor.
Searing the chicken before adding it to the slow cooker gives it a browned exterior and adds more flavor to the finished dish. If you’re short on time, you can skip this step and add the seasoned chicken directly to the slow cooker.
Can I Use Bone-In Chicken Thighs?
Yes. You can use bone-in chicken thighs, but they’ll take longer to cook and may need a little extra time to become tender.
Make sure the chicken reaches at least 165°F before serving.
Can I Use Chicken Breasts?
Yes, but chicken breasts are much leaner and can dry out more easily in the slow cooker. If you use chicken breasts, use similarly sized pieces and start checking them earlier.
I prefer chicken thighs for this recipe because they stay tender and work especially well with the slow-cooking method.

How to Store Leftovers
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or in a skillet over low heat with some of the sauce to keep the chicken moist.
Can You Freeze Slow Cooker Chicken Thighs?
Yes. Allow the chicken and sauce to cool completely, then transfer them to a freezer-safe container. Freeze for up to 3 months for the best quality. Thaw overnight in the refrigerator and reheat gently before serving.

Slow-Cooker Chicken Thighs

Ingredients
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons cornstarch
- 1½ teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon fine salt
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- 1 tablespoon olive oil, plus more if needed
Maple Chipotle Sauce
- 3 tablespoons tomato paste
- ¼ cup pure maple syrup
- 1-2 chipotle peppers in adobo, finely chopped + 2 tbsp adobo sauce from can
- 2/3 cup chicken broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce , or tamari
- 3 garlic cloves, finely grated or minced
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
Optional:
- 1 tablespoon fresh lime juice
- 2 green onions, thinly sliced
- Chopped cilantro or parsley, optional
Instructions
- Place the 2 pounds boneless skinless chicken thighs in a large mixing bowl.
- In a small bowl, combine the 2 tablespoons cornstarch, 1½ teaspoons smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon fine salt, ½ teaspoon ground cumin, ½ teaspoon dried oregano, and ¼ teaspoon black pepper.
- Sprinkle the seasoning mixture evenly on the chicken thighs and mix with your clean hands to coat all the pieces.

- Place all the Chipotle sauce ingredients ( 3 tablespoons tomato paste, ¼ cup pure maple syrup, 1-2 chipotle peppers in adobo, 2/3 cup chicken broth, 2 tablespoons apple cider vinegar, 2 tablespoons soy sauce , 3 garlic cloves, ½ teaspoon ground cuminand ½ teaspoon smoked paprikain a blender and blend until smooth. Pour 2-3 tablespoons over the seasoned chicken and mix again to combine.
- Heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 3-4 minutes, without moving them, until they start to brown. Flip and cook for another 2-3 minutes.

- Transfer the seared chicken thighs to the slow cooker.
- Pour the remaining chipotle sauce around and over the chicken thighs in the slow cooker.

- Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the chicken is very tender and reaches at least 165°F.
- Stir the 1 tablespoon fresh lime juice into the sauce. Taste and adjust with additional salt, maple syrup, or lime juice, if needed.

- Serve with cooked rice and spoon the maple chipotle sauce over and around the chicken. Garnish with 2 green onions and Chopped cilantro or parsley.

Notes
- Serving size: 1 chicken thigh with about ¼ cup of maple chipotle sauce. Roughly 5 to 5½ ounces of raw chicken per serving
