They’re always so flavorful and sure to please the whole family for dinner. Well, here’s some great news: you can make DIY rotisserie-style chicken at home with only 5 minutes of prep. Recipe Overview
Before You Get Started
- Pat the chicken skin dry before coating it with the oil and seasonings. By removing as much moisture as possible now, you’ll get a nicely crisped chicken skin.
- If you have time, let the chicken sit at room temperature for 30 minutes before roasting it. It will ensure a juicier result!
- If you want to prep it ahead of time, you can rub it with the seasonings and store it in a resealable bag in the fridge for up to 24 hours. This will also allow the salt to penetrate the chicken meat, which will make it juicier and more flavorful inside.
- To check for doneness, poke a meat thermometer into the thickest section of the thigh – it should read 165°F.
- Once the chicken has roasted, cover with a piece of tented foil and let it rest for around 15 minutes before carving. This stops all the juice from the meat from running out when you slice it, keeping it moist.
Common Questions
It should take around 60-70 minutes at 375°F for the whole chicken to be fully cooked. You can easily test the doneness by checking that the temperature of the thickest part of the chicken thigh has reached 165°F with a meat thermometer.
No, you shouldn’t need to cover the chicken. The time needed to cook the chicken through should leave you with a golden-brown, crispy chicken.
Rubbing the whole chicken with oil helps to lock in moisture and helps the chicken skin crisp up. It stops you from needing to baste the chicken as it roasts which also saves on effort.
Ingredients Needed
Below are the ingredients you’ll need for this homemade rotisserie chicken. Full measurements can be found in the recipe card further down in the post.
- Whole chicken: Before cooking a whole chicken, it’s a good idea to check in the cavity for giblets. If they’re in there, remove them and use them for making homemade chicken broth. Opt for the highest quality chicken you can afford; the flavor of the meat will be much better.
- Olive oil: You can also use avocado oil.
- Seasonings: Italian seasoning, Garlic powder, Onion powder, Salt, and Ground black pepper.
How to Make Rotisserie Chicken at Home
Start by preheating the oven to 375°F.
1️⃣ Pat the chicken dry
Use paper towels to pat the chicken skin dry, removing any excess moisture from the surface.
✏️ This aids the crisping of the chicken skin in the final stages of roasting.
2️⃣ Rub with seasonings
Mix the oil with the Italian seasoning, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken.
✏️ Mixing the seasonings with oil makes it easier to distribute the seasonings evenly over the whole chicken.
3️⃣ Roast in the skillet
Place breast side up in a skillet and roast for 60-70 minutes. Let the chicken sit for a few minutes before you carve and serve.
Storage & Make Ahead Tips
To make this ahead of time: rub the chicken with the oil-seasoning mixture, then place it into a large resealable food bag and store it in the fridge for up to 24 hours.
To store leftover cooked rotisserie chicken: cover with foil and store in the fridge for up to 3 days. Alternatively, pick the meat off the carcass and store it in an airtight container in the freezer for up to 3 months.
