Homemade Rotisserie Chicken Recipe (Better Than Costco)
Get that rotisserie chicken flavor at home with this oven-roasted recipe. Perfectly golden skin, full of flavour, and so moist without needing any special equipment.
Pat dry the 1 whole chicken with paper towels, if needed.
In a small bowl, combine the 1 1/2 teaspoons Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder and a generous pinch of Kosher salt and ground pepper with the 1 1/2 tablespoons olive oil.
Pour over the chicken and using your clean hands, rub it all over, outside and get some inside too.
Place the seasoned chicken in an oven-safe skillet, breast-side up. Roast for 60-70 minutes, until the temperature reaches 165°F.

Tips:
Pat the chicken skin dry before coating with the oil and seasonings. By removing as much moisture as possible now, you'll get a nicely crisped chicken skin.
If you have time, let the chicken sit at room temperature for 30 minutes before roasting it. It will ensure a juicier result!
Once the chicken has roasted, cover with a piece of tented foil and let it rest for around 15 minutes before carving. This stops all the juice from the meat from running out when you slice it, keeping it moist.
Storage:
To make this ahead of time, rub the chicken with the oil-seasoning mixture, then place it into a large resealable food bag and store it in the fridge for up to 24 hours.
To store leftover cooked rotisserie chicken, cover with foil and store in the fridge for up to 3 days. Alternatively, pick the meat off the carcass and store it in an airtight container in the freezer for up to 3 months.
