These date cookies are soft, naturally sweet, and made with just two simple ingredients. No added sugar, no butter, and no eggs. Just dates and almond flour blended together into an easy, wholesome cookie.

I make these cookies when I want something sweet but don’t feel like baking a full recipe with a long list of ingredients. They have a soft, chewy texture with a mild sweetness from the dates, making them perfect for when you want something simple but still satisfying.
What I love about these cookies is that they are Gluten-free, Dairy-free, Egg-free, Oil-free, and made with no refined sugar. They come together so quickly, and I like knowing exactly what’s in them.

Ingredients for the date cookies
Below are the ingredients I used to make these date cookies. You essentially only technically only need 2 ingredients if you do not want the chocolate drizzle.

- 2 cups Almond Flour: Almond flour keeps these cookies, moist, soft, and gluten-free. Coconut flour will work but using any other flour will change the texture of the cookies.
- 1 cup medjool Dates: You will be using about 10 large dates. Don’t forget to remove the seeds.
- 1/4 dark chocolate chips: This is only needed if you want to add that chocolate drizzle.
Optional add-ons: These ingredients below are not needed at all but can be optional for added taste and warmth to the cookies.
- I tsp vanilla extract
- 1/4 tsp cinnamon
- Flaky Seasalt
- Mini Chocolate chips
Recipe Tips
- Use soft, fresh dates so they blend easily. Medjool are usually best.
- If the dates are dry, soak them longer.
- Blend until smooth for the best texture. You do not want large chunks of dates.
- If the dough feels sticky, add a little more almond flour. Start with 1-2 tablespoons at a time.
- Slightly wet your hands when shaping the dough to prevent sticking. Sometimes this is not even necessary but it is an option depending on the dough.
- Don’t over bake them. These cookies should stay soft
How To Make Date Cookies
Here’s the step by step process I used to make these cookies.

Soak the Dates: Place the pitted dates in a bowl and soak them in hot water for 15 minutes.
Meanwhile preheat the oven to 350F and line a sheet pan with parchment paper.
Make The dough: Drain the dates really well and transfer them to a food processor. Add in the almond flour and process for about 30-40 seconds until just combined and a dough is formed.
✏️ If the dough is a bit sticky, you can add 1-2 tablespoons of almond flour and blitz again or use your hands to mold it in. The dough should not be sticky unless you didn’t drain the dates well.

Shape the cookies: Make 12 equal size balls and place them on the prepared sheet pan. Using your fingers or spoon, press them down slightly to form a cookies shape.
✏️ You can just press down the balls to flatten the cookie dough a bit to form a cookie shape. The cookies will not expand and spread. It will hold its shape.
Bake them: Bake for 8 to 10 minutes or until it is golden grown on the edges. The cookies will not expand. Allow them to cool fully for about 5-7 minutes. Transfer to a wire rack.
Prepare the chocolate: While the cookies cool, melt the chocolate chips in the microwave at 30 seconds increments until fully melted.

Finalize and Serve: Place the melted chocolate in a piping bag to drizzle melted chocolate over the cooled cookies. You may use a ziplock bag or a spoon to do this too. Allow the chocolate to set before serving. Enjoy.

Yes, the dates adds natural sweetness, but they’re not overly sweet like traditional cookies. Plus if you are adding the chocolate drizzle, it will be the right amount of sweetness.
Almond flour works best for texture. Other flours may change the result.

- Note 2: You can just press down the balls to flatten the cookie dough a bit to form a cookie shape. The cookies will not expand and spread. It will hold its shape.
- If you prefer to just add the chocolate chips in the dough instead of doing a chocolate drizzle, you can do that too. You will need to transfer the dough to a bowl and add the chocolate chips. I would recommend using mini chocolate chips.
- Also, the chocolate can be optional and not a must. You can also just add a few chocolate chips on top of each dough before baking and skip the drizzling process.
- Do allow the cookies to cool before transfering to a rack and drizzling chocolate over them.
