This is what you will call a crustless pizza! Sounds cool? I love the fact that you do not need to worry about making dough or any base crust for this pizza. This base of this cottage cheese pizza bowl is made from cottage cheese, marinara or pizza sauce, garlic powder, and Italian seasoning. I then topped it with shredded mozzarella, grated parmesan cheese, and for the toppings, I decided to go with black olives and turkey pepperoni.
This pizza bowl reminds me of lasagna. It is low in carbs, and each serving has 50 grams of protein!

Below is a list of ingredients to make this crustless pizza. Full measurements are listed further down below in the recipe card.
- Cottage cheese: I used the whole tub which was 16 ounces. Mine was also 4% low-fat cottage cheese. Any would work.
- Part-skim mozzarella cheese: low-fat or full-fat works.
- Grated Parmesan Cheese
- Marinara sauce or pizza sauce would also work just fine.
- Sliced black olives
- Turkey pepperoni slices: use any you have on hand. I do not eat pork or bacon so I used turkey.

Tips From My kitchen ๐ฅฐ
Tips for success
- You can use full-fat or low-fat cottage cheese. I used 4% milk fat and it was perfect.
- You do not necessarily need to use the grated parmesan cheese if you are counting your macros. It will still taste nice without it, but I feel like it adds a nice touch.
- Instead of making it in one dish, you may divide it up into 2 or 4 individual servings using oven-safe ramekins or bowls.
- Use any of your favorite toppings.
- Double the amount, prep ahead in containers, and store them in the fridge until ready to bake. Then either bake them when ready or just cook in the microwave.
How to make it in the microwave
You can make this pizza bowl in the microwave if you do not want to use your oven. I suggest portioning them into 2 or 4 microwave-safe glass bowls. Follow these steps to make it in the microwave.
- Divide the cottage cheese and marinara sauce equally into two bowls.
- Next sprinkle in the garlic powder and Italian seasoning. Toss to combine and microwave for 30 seconds.
- Top with shredded mozzarella, grated parmesan, and whatever toppings you are using.
- Microwave again for another 30-60 seconds or until the cheese is fully melted and bubbly.
- Allow it to cool a bit, top with fresh basil, and enjoy it as is, or serve with your favorite chips or veggies.
Variations
- Add in more veggies like chopped onions and bell peppers. You would want to add it in with the cottage cheese.
- Try different toppings. If you have any leftover proteins add them in.
- Add some heat. Either sprinkle some chili peppers with your toppings or add some sliced jalapenos.
- My one kid drizzled hot honey over his, and he said it was so good! ๐
Common Questions
Yes. You can make this pizza bowl in the air fryer. Make sure you are using an air fryer or oven-safe dish. Air fry at 200ยฐC for 10 minutes or until the cheese is fully melted and bubbly.
To make it vegetarian, skip the meat and top with more veggies instead.
This pizza bowl does not freeze well. Once thawed the contents will separate.
You sure can. You may add a bit of ricotta cheese with the cottage cheese. Instead of mozzarella cheese, you may also use any other low-moisture shredded cheese.
Storing and Reheating
- Storing: If you have leftovers, place them in a sealed container and store them in the fridge for up to 4 days.
- Reheating: I prefer to just reheat these in the microwave. Reheat them at 3o second increments until they are heated through.
