Once you get used to making your burrito bowls at home you will skip Chipotle, save money, and have a much better and healthier meal. The chicken for this healthy burrito bowl recipe is so juicy and delicious. This Chipotle-inspired recipe is so easy to make it will be a perfect lunch or dinner the entire family can enjoy. Plus it’s a great recipe to use for meal preps.

Ingredients you will need
- Chicken breast: we used boneless and skinless Chicken Breasts. But you may swap this with boneless and skinless chicken thighs.
- Cooked Brown Rice: or white rice will also work.
- Fresh Lime Juice: don’t have lime? Use lemon juice.
- Avocado: sliced
- Mixed Greens, or you may used sliced Romaine lettuce
- Black Beans: Pinto beans will work too
- Canned corn: you may cook fresh corn and slice off the cob, or corn salsa
- Cherry or Grape Tomatoes
- Greek yogurt: this can be swapped with sour cream
- Red onion: if you don’t like onions this is optional.
- Jalapeno Peppers, optional
- Sea salt and freshly ground black pepper, to taste
- Handful of chopped fresh cilantro, plus more to garnish
For the chicken seasoning
- Oil: we used olive oil, but you may also use avocado oil.
- Lime juice: or lemon juice. Freshly squeezed is best.
- Seasonings: Paprika, ground cumin, Chili Powder, Garlic Powder, Onion Powder, Dried Oregano, and salt and pepper.
How to make chicken burrito Bowls
- In a ziploc bag, mix all marinade ingredients until smooth. Add chicken, seal the bag and shake until chicken is evenly coated.
- Heat a grill pan or an outdoor grill over medium-high heat. Add cook the chicken for about 5-7 minutes on each side, or until cooked through and no longer pink on the inside.
- Remove from the grill and let it rest for 5 minutes before slicing it into bite-sized pieces.
- In a small bowl mix cooked rice with lime juice, chopped cilantro, sea salt, and freshly ground black pepper.
- Toss to combine then set aside. To assemble the bowls, add the greens at the bottom of each one, then 1 sliced chicken breast.
- Divide the remaining ingredients among the 2 bowls. Garnish with fresh cilantro and jalapeno and enjoy!
Recipe notes and tips
- If you prefer a more flavored rice, make it with cilantro lime rice instead.
- Want to cut down on the carbs and calories? Consider replacing the rice with a low-carb version and using cilantro lime cauliflower rice
- Replace the chicken breast with the protein of your choice. You may also use boneless and skinless chicken thighs, but keep in mind the fat content will be higher when using chicken thighs in place of chicken breast. You may even use Rotisserie chicken or ground beef.
- If you have some fresh pico de gallo skip the tomatoes and add that instead.
- Like it spicy? Drizzle some hot sauce over it.
- Serve the chicken burrito bowl with some tortilla chips for some extra crunch.
- You may replace the Greek yogurt with some fat-free shredded cheese
Storing and Reheating
- Storing: Store leftover chicken burrito in a sealed container in the fridge for up to 5 days. If you want to freeze it, we recommend not freezing the tomatoes or lettuce. Those can be added later when ready to serve. Freeze for up to 3 months.
- Reheating: Chicken burrito bowls can be enjoyed warm or cold. If you would rather serve it warm, do not reheat the avocado, the lettuce or greens, and the yogurt or sour cream. Reheat in the microwave until warm enough to serve. About 1-2 minutes.

Burrito bowls can be served hot or cold. It is a personal preference. Once made fresh, it can be enjoyed warm and if it is stored, you may skip reheating it and just serve it cold.
A burrito bowl will have several things in it based on your personal preference. Most burrito bowls will have rice, beans, some sort of protein like chicken or steak, veggies like corn, salsa or tomatoes, sour cream, lettuce, and guacamole.
Both can be customizable, but we would have to say that a bowl is a bit healthier than a burrito because you will be skipping the added carbs from the tortilla!
Grilling the perfect chicken breast
Allow the chicken breast to cook on the grill for about 5-7 minutes on each side before you flip. Leave the chicken to cook on medium heat so it doesn’t cook too fast and dry out. Essentially, an overcooked chicken will be too try and rubbery. If you prefer using a thermometer, wait until the chicken is tested with a thermometer at 165 Degrees.
What to put in a chicken burrito bowl
A chicken burrito bowl will be very customizable to whatever you feel like putting in this and this will also determine the amount of calories that will be in your burrito bowl. But here is a list of ingredients that are usually added to a chicken burrito bowl.
- Protein: your first choice would be grilled chicken. But you may also use another protein of your choice.
- Rice: you may choose whatever rice you prefer. White rice, brown rice, or cauliflower rice. You may even use quinoa instead.
- Beans: the best two options of beans are black beans or pinto beans.
- Veggies: This is optional and can be a stir fry of onions and green peppers. Another popular vegetable added is some fresh corn kernels.
- Greens: a mix of greens of chopped lettuce
- Sour cream: a healthier swap would be Greek yogurt.
- Guacamole: this is what is typically added at Chipotle. But you may add sliced avocados instead.
- Salsa: This can be corn salsa, pico de Gallo, or chopped tomatoes

- 1 Cup Cooked Brown Rice
- 1 Tbsp Lime Juice
- 1 Small Avocado, sliced
- 2 Cups Mixed Greens
- ½ Cup Black Beans
- ½ Cup Canned corn, drained, or grilled
- ⅓ Cup Cherry Tomatoes, cut into quarters
- 2 Tbsp Greek yogurt
- ½ Red onion, diced
- 1 Jalapeno Pepper, sliced
- Sea salt and freshly ground black pepper, to taste
- A small handful of chopped cilantro, plus more to garnish
For the Chicken Marinade
- 2 Tbsp Olive oil
- 1 Tbsp Fresh lime juice
- ½ tsp Paprika
- ½ tsp Ground Cumin
- ¼ tsp Chili Powder
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp Dried Oregano

Great recipe. The whole family loved it. We’ll definitely be making this again. We added some diced red capsicum as well as a sprinkling of grated cheddar. Also, we had the option of greek yoghurt or sour cream…or both!

Loved it, as did the family!! I doubled the marinade for the chicken as we like lots a flavour and it was perfect!
I used brown rice and ready made Mexican seasoning. Next time I’ll use more. I added cheese. Overall it was lacking in flavour. I hope using more marinade will be better.
