How To Make BBQ Chicken Pizza

Make the Dough: Mix together the flour, baking powder, salt, and Greek yogurt until a dough forms. Knead until smooth, then let it rest for about 30 minutes.

Shape and Pre-Bake: Press the dough into a 10 to 12-inch circle, then bake for 10 minutes. This helps create a crispier crust.

Add the Toppings: Spread the BBQ sauce over the crust, then top with the shredded chicken, pineapple, and mozzarella cheese.

✏️ NOTE: The color of the pizza crust is a bit on the brown side because I used whole wheat flour. If you are going to use any other flour, it should not be this dark. If you prefer the crust softer than crispy, bake it for 1-2 minutes less each time you add it to the oven.

BQ Chicken Pizza With Greek Yogurt Crust

This BBQ Chicken Pizza features an easy homemade Greek yogurt crust topped with BBQ sauce, rotisserie chicken, mozzarella cheese, and pineapple for a quick and flavorful family dinner.

Ingredients

For pizza base:

  • 1 tablespoon olive oil, divided
  • cups whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon fine kosher salt
  • cups plain Greek yogurt

Toppings:

  • 1/2 cup BBQ sauce
  • 1 1/2 cups shredded rotisserie chicken
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup fresh pineapple chunks
  • Freshly crushed pepper, to taste

Instructions

  • Preheat the oven to 425°F. Line a round pizza pan or large baking sheet with parchment paper and drizzle with 1/2 tbsp of olive oil (from the 1 tablespoon olive oil).
  • In a large bowl, add the 1¼ cups whole wheat flour, 2 teaspoons baking powder, and ½ teaspoon fine kosher salt. Spoon in the 1¼ cups plain Greek yogurt and start mixing with a spatula until a crumbly dough forms. Use your hands to finish mixing the dough into a ball.
  • Turn the dough out onto a floured surface and knead for about 2 minutes, until smooth and elastic. You may add 2-3 tablespoons of flour if it's too sticky!
  • Drizzle the bowl with the remaining 1/2 tbsp of oil, then place the dough ball in it. Cover and allow it to sit for 30 minutes.

  • Transfer the dough to your prepared pizza pan and spread it with your fingers until the base is thick and about 10-12 inches round.
  • Bake for 10 minutes. Pre-baking the base first makes it crispy.

  • Remove from the oven and spread the 1/2 cup BBQ sauce over the base. Sprinkle it with 1 1/2 cups shredded rotisserie chicken 1 1/2 cups shredded mozzarella cheese 1/2 cup fresh pineapple chunks. Top with cheese.
