- Carrots: You may use large carrots or opt for baby carrots.
- Olive oil, or avocado oil, works just as well
- Garlic cloves: If you do not have fresh garlic, use garlic powder, but the taste will change slightly and won’t be as aromatic. You can also buy pre-minced garlic in Jars but trust me, fresh tastes best.
- Honey or maple syrup: Use maple syrup for a vegan option or agave.
- Kosher salt and Ground pepper
- Parsley: You may use any other fresh herbs to garnish, like fresh thyme.
Recipe Tips
- Cut carrots evenly: Try to slice the carrots about the same size so they roast evenly. Thicker pieces will take longer to soften.
- Do not overcrowd the pan: Spread the carrots in a single layer. If they are piled on top of each other, they will steam instead of caramelize.
- Roast at high heat: A hotter oven helps the honey glaze caramelize and gives you those golden charred edges.
- Toss halfway through: Flip or stir the carrots halfway through roasting so they brown evenly on all sides.

How to make Roasted Honey Glazed Carrots
- Preheat oven to 400F.
- Prep the carrots: First, peel and slice the carrots diagonally into 2-inch pieces.
- Season the Carrots: Next, place the carrots in a large mixing bowl. Add oil, garlic, honey/maple syrup, salt, and pepper. Then stir well until all the pieces are evenly coated.

- Bake or Roast: Arrange carrots in a single layer in a large non-stick baking pan. Bake for 15-20 minutes, or until caramelized and fork-tender. Note: You can use either the bake or roast setting. I like to use the roast or convection bake setting. Either one will work just fine.
- Garnish and serve: Lastly, transfer the carrots to a serving bowl and garnish with fresh chopped parsley.

Yes, you can use baby carrots instead. Just skip slicing them since they are already small. Keep in mind, they may take slightly longer to roast since they are thicker and often have more moisture. Dry them well before adding the glaze so they caramelize properly.
Yes, you can prep the carrots in the glaze and store them in the fridge for up to 1 day before baking. You could also bake them ahead, just cook them 2-3 minutes less than directed. Then reheat in the oven before serving.

- 3-4 garlic cloves, minced
- 2 1/2 tablespoons honey, or maple syrup
- 1/2 teaspoon kosher salt, or to taste

Instructions
- Preheat the oven to 400F.
- Peel and slice the 2 pounds carrots diagonally into about 2-inch pieces.

- Place the carrots in a large bowl. Add 2 tablespoons olive oil, 3-4 garlic cloves, 2 1/2 tablespoons honey, 1/2 teaspoon kosher salt, and 1/4 teaspoon fresh ground pepper. Mix well until all pieces are evenly coated.

- In a large non-stick baking pan arrange the coated carrots in a single layer.
- Place into the preheated oven and bake for about 15-20 minutes, or until caramelized and tender.

- Transfer to a serving bowl and garnish with Chopped fresh parsley.

Hi. yes, you can. Depending on the size, you can do 375F for 15 minutes or 400 for 10-12 mins. stop half way and either toss or shake the basket.
This was great, but with baby carrots, I needed almost an hour to cook them. 🙁 Once they were done, they were very tasty.
