And these burgers are some of the most flavorful, perfectly cooked ones that I’ve ever tasted. They are easy to make with pantry staple seasonings and other basic ingredients, yet taste so amazing. You only need about 10 minutes prep time and 10 minutes cook time, so you can have dinner ready in 20 minutes, talk about winning the dinner game!

While these make a great summer meal, they actually work all year round by using an inside grill pan. They’re the perfect thing to make for summer celebrations and cookouts, but this is also a fantastic recipe for busy weeknights with minimal prep and short cook time.

  • Ground meat: 80/20 ground beef will give you a super juicy burger. However, you can use lean ground beef to lower the fat and calories.
  • Seasonings: A combination of smoked paprika, onion powder, and garlic powder gives the meat a nice smoky flavor with hints of onion and garlic that’s so good.
  • Hamburger buns: Pick your favorite kind! I prefer a sesame seed bun or brioche bun, but any will do!
  • Cheese: American cheese will melt perfectly on your homemade hamburger!

Variations and substitutions

  • For the meat: Change things up and try making the patties with ground turkey or ground chicken.
  • Cheese: Any favorite cheese can be used, from Gouda cheese to pepper jack cheese. You can even omit the cheese to keep these dairy-free.
  • Spices and flavorings: For different flavors, try mixing different sauces and seasonings into the meat. BBQ sauce, Worcestershire sauce, ketchup, or hot sauce are all great options. You can also change up the seasonings with chili powder, seasoned salt, or ranch seasoning.

How to make homemade hamburgers

Step 1: In a large bowl, combine the beef, with the seasonings, and mix well. Form into a ball and divide it into 4 portions. Take each portion and form into 1/2 inch thick patties.

Step 2: Preheat a grill pan or an outdoor grill over medium heat. Place patties onto the preheated grill or grill pan. Cook for 3 minutes on one side.

Step 3: Flip the patty. Cook for another 3 minutes or until burgers register 155 degrees F.

Step 4: Grill the buns, cut side down for 1-2 minutes.

Recipe Tips

  • Don’t over-mix the beef mixture: Use your hands to mix the seasonings into the meat until just combined. If you over-mix, the patties can become tough and chewy.
  • Forming the patty: Make 1/2-inch thick patties that are in a circular shape. Before cooking, try pressing your finger into the center of the patty to create a divot in the patty. This will prevent it from shrinking too much and cooking it unevenly.
  • Don’t press: You might be tempted to press down on the patties while they are cooking, but this will squeeze out all of the juiciness that is meant to be inside the meat.
  • Allow the patties to rest: Let the hamburger meat rest for 5-10 minutes after cooking to allow the juices to distribute throughout the patty.

How do you know your burger is done cooking?

To be safe to eat, the internal temperature of the thickest part of the meat needs to register 160 degrees Fahrenheit. I recommend taking your patties off of the grill when it registers 155 degrees because it will still continue to cook once off of the grill.

Can you cook homemade hamburgers on the stovetop?

If you don’t have a grill or grill pan, you can cook the patties in a pan on the stovetop. Add about 1/2 tablespoon of olive oil to a cast iron skillet or nonstick skillet and place it over medium heat. Once your pan is hot, cook your burgers for 3-5 minutes per side until they’re no longer pink.

Can you make the patties ahead of time?

Yes, you can mix the ground beef with the seasonings and form into patties a day ahead of time. Keep them covered on a plate in the refrigerator. They will keep for 1 to 2 days.

  • To freeze: Freeze uncooked patties on a baking sheet, then place them all together in a ziplock bag. Thaw in the fridge overnight before cooking.

  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 hamburger buns
  • 4 slices Gouda or American cheese
  • Optional toppings: pickle slices, tomato, lettuce, red onion, ketchup, mustard

Instructions
