Traditionally, ground beef stroganoff calls for tender beef cuts and sour cream. I lighten it up with lean ground beef and Greek yogurt for a healthier version. It’s just as cozy, flavorful, and satisfying with less grease.

You can never go wrong with the classic pairing of stroganoff and egg noodles for a hearty dinner. I also love serving this meat sauce over boursin mashed potatoes, white rice, or even my garlic-butter mashed cauliflower for a low-carb option.

Key Ingredients

Here’s what you need to make this family-friendly classic beef dish. Full measurements are in the recipe card below.

ingredients for ground beef stroganoff.
  • Lean ground beef: I prefer to use 90/10 lean ground beef. You can use a higher fat content, but I recommend draining the extra grease.
  • Cremini mushrooms: I find the earthy flavor and meaty texture pair well with the beefy sauce.
  • Sweet onion and garlic: These aromatics are key to building the foundation of the sauce.
  • Gluten-free flour or cornstarch: I add a couple of spoonfuls for thickening.
  • Beef broth: I use low-sodium broth to meld all the flavors together without watering down the dish.
  • Worcestershire sauce and Dijon mustard: I add both for depth and flavor.
  • Seasonings: Paprika, dried thyme, garlic powder, salt, and pepper.
  • Greek yogurt: I use room-temperature Greek yogurt to help prevent the sauce from curdling.
  • Egg noodles (optional): The thick texture holds up well to the heartiness of the sauce.
  • Fresh parsley: The perfect garnish to add a hint of freshness to all the rich, creamy flavors.

How to make Ground Beef Stroganoff

Brown the beef. In a large, deep skillet, cook the ground beef undisturbed for 2-3 minutes. Break into smaller pieces and cook for another 4-5 minutes until browned. Season with salt and pepper. Transfer to a plate and leave about a tablespoon of rendered fat in the skillet.

Add the mushrooms, onion, garlic, and flour. In the same skillet, add the mushrooms. Cook over medium-high heat for 6-8 minutes, stirring occasionally. Reduce the heat to medium. Add the sweet onion and cook for 4-5 minutes, stirring occasionally. Add the garlic and cook until fragrant, about 30 seconds. Sprinkle the flour over the mushroom-onion mixture and stir continuously for 1 minute.

Add the seasonings, broth, and beef. Slowly stir in the beef broth. Add the Worcestershire sauce, Dijon mustard, paprika, thyme, garlic powder, salt, and pepper. Add the browned ground beef back into the skillet. Stir and simmer gently for 5-6 minutes, stirring occasionally until the sauce thickens. Cool for 5 minutes.

Temper the yogurt. In a small bowl, temper the room-temperature Greek yogurt with 3-4 tablespoons of warm stroganoff sauce. Stir into the skillet until fully combined. Serve over egg noodles or as desired.

Tips for the Best Ground Beef Stroganoff

  • Prep before you start: The ingredients cook quickly, so I make sure to have everything ready to go so things move smoothly.
  • Don’t crowd the pan: I recommend cooking the beef in batches if your skillet isn’t large enough. Too much beef in the pan will prevent proper browning.
  • Cook the flour: Before adding the broth, I always let the flour cook. If you add the broth too soon, the flour won’t cook fully and you’ll end up with a raw flour taste.
  • Add the yogurt last: A must! It helps prevent the sauce from curdling. I also make sure to use room temperature yogurt so the sauce doesn’t break.

Variations

  • Try other beef cuts: Tenderloin, boneless ribeye, or other tender beef options are great substitutes. Chuck roast works too as a budget-friendly alternative.
  • Use another lean meat: Ground chicken or turkey are naturally lean and great substitutes.
  • Sub sour cream: I like using Greek yogurt for a healthier version, but you can also use full-fat sour cream.
  • Make it a soup: Stretch your dollar with my cozy Beef Stroganoff Soup!
  • Add more veggies: I’ll sometimes sneak in fresh spinach or peas for color and flavor.

What to serve with Ground Beef Stroganoff

Egg noodles and ground beef stroganoff go together like peas and carrots. But this creamy meat sauce pairs well with so many other dishes. Here are some of my favorite pairings:

Storing and Reheating

  • Storing: Place the leftover sauce in an airtight container. If you have leftover egg noodles, store those in a separate container so they don’t absorb the sauce. Refrigerate for up to 4 days.
  • Reheating: Reheat leftovers on the stovetop over medium heat until thoroughly warmed, stirring occasionally. Add a little beef broth or milk if the sauce is too thick.

Common Questions

Can I use other types of beef?

Yes. You can use other tender beef cuts like ribeye or filet mignon. I also think chuck roast is great for a less expensive option.

Can I use canned mushrooms?

You can, but I don’t recommend it. Canned mushrooms will have a mushier texture. I find they’re also less flavorful.

What can I use instead of Greek yogurt?

Sour cream is traditional and a great alternative to Greek yogurt.

Why did the Greek yogurt curdle?

Yogurt may curdle if it gets too hot too fast. So I always remove the sauce from the heat and cool it down a bit before adding the yogurt. Using room temperature yogurt also helps.

  • 1 tablespoon extra-virgin olive oil
  • 12 ounces cremini mushrooms, sliced
  • 1 large sweet onion, finely diced
  • 4 garlic cloves, minced
  • 2 tablespoons gluten-free flour or cornstarch
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¾ cup full-fat plain Greek yogurt, at room temperature!!

Optional, For Serving:

  • 8 ounces dry wide egg noodles, gluten-free if needed
  • Fresh parsley, for garnish
  • Freshly cracked black pepper

Instructions

  • If serving with egg noodles, bring a large pot of salted water to a boil. Cook 8 ounces dry wide egg noodles according to package directions until al dente. Drain and set aside. Reserve about ½ cup pasta cooking water to loosen the sauce later, if needed.
  • Heat a large, deep skillet over medium-high heat. Add 1½ pounds lean ground beef and spread into an even layer. Cook undisturbed for 2-3 minutes to develop a golden-brown color. With a wooden spoon, break the beef into smaller pieces, keeping some large chunks. Continue cooking for another 4-5 minutes, until browned. Season lightly with black pepper. Transfer to a plate, leaving about 1 tablespoon of rendered fat in the skillet. Drain any excess.

  • Sprinkle 2 tablespoons gluten-free flour or cornstarch over the mushroom-onion mixture. Stir continuously for 1 minute to cook off the raw flour taste.
  • Gradually pour in 2 cups low-sodium beef broth, stirring constantly to prevent lumps. Add 1 tablespoon Worcestershire sauce, 1 tablespoon Dijon mustard, 1 teaspoon smoked paprika, ½ teaspoon dried thyme, ½ teaspoon garlic powder, ½ teaspoon fine sea salt, and ½ teaspoon freshly ground black pepper.

  • Return the browned ground beef to the skillet. Stir well and bring to a gentle simmer. Reduce the heat to medium-low. Simmer uncovered for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and the flavors come together. The sauce should be rich and spoonable but not overly thick. Remove the skillet from the heat and let cool for 5 minutes.

  • Place the room-temperature ¾ cup full-fat plain Greek yogurt in a small bowl. Gradually whisk in 3-4 tablespoons of the warm stroganoff sauce to temper the yogurt. Stir the tempered yogurt mixture back into the skillet until completely incorporated. The sauce should be creamy and silky.

Notes

  • Servings: 6
  • Serving Size: Approximately 1½ cups (stroganoff with noodles)
  • Macros include egg noodles.
  • Use full-fat Greek yogurt: I find the higher fat content gives the sauce the best texture and flavor.
  • Avoid constantly stirring the mushrooms: I let them sit against the hot skillet to encourage browning and concentrate their savory flavor.
  • Cook the flour before adding the broth: If you add the broth too soon, the flour won’t meld into the sauce and will have a raw flavor.
  • Cool the sauce before adding yogurt: The yogurt will curdle if it heats up quickly. Add it after the sauce cools, and avoid putting the sauce back on the heat.
