You will need 3 simple ingredients that most likely everyone already has on hand. If you have peanut butter, eggs, and sugar, then you can make these 3 ingredient peanut butter cookies any time any day. Plus it’s so simple to put together and can be ready in less than 30 minutes. You may add some chocolate chips to these peanut butter cookies but they are perfect just the way they are. Simple and delicious.

Ingredients you will need to make these cookies

  • Peanut Butter: please use creamy peanut butter like the Jiff brand. All-natural peanut butter won’t work.
  • Sugar: You may use any sugar but coconut sugar or brown sugar would work great
  • 1 teaspoon vanilla extract
  • 1 large egg: allow the eggs to reach room temperature.
  • Salt flakes, optional topping

  • Preheat oven to 350° F
  • In a medium bowl, add the peanut butter, egg, sugar, and vanilla extract. Using a hand mixer, mix the ingredients until they are nicely combined and creamy looking. (you may refrigerate the dough for a couple of hours)
  • Line a sheet pan with parchment paper.
  • Using a scooper or a spoon, scoop out about 1-inch of cookie dough. Using your hands roll them into a ball and place them on the sheet pan.
  • Repeat the last step until you have rolled all the dough and lined it up on the sheet pan. Space then out a bit.
  • Using a fork, press down and flatten each of the cookie balls in opposite directions to make a pattern.
  • Place in the preheated oven and baked for 10-12 minutes or until they are golden crisp on the sides.
  • Remove the cookies from the oven and allow them to cool for about 3-5 minutes before transferring them to a rack or plate. Enjoy.

Notes. You may use 1/2 cup granulated sugar and half cup brown sugar

Frequently asked questions

Should you refrigerate peanut butter cookie dough before baking?

This is optional. Depending on the peanut butter you used, you may feel like after you have mixed the dough, it may be a bit too soft to handle. Refrigerating for 2-3 hours will thicken up the dough and allow it to be easier to handle.

Do peanut butter cookies harden as they cool?

Peanut butter cookies will be very fluffy and soft when they first come out of the oven. It is important to allow them to cool so they harden up or else they will be crumbly.

Should you bake cookies on parchment paper?

We always recommend using parchment paper or some sort of silicone baking sheet to help the cookies cook evenly and prevent them from sticking to the sheet pan.

Why do you put fork marks on peanut butter cookies?

The fork marks will prevent the cookies from spreading too much and allow them to cook evenly. The fork marks on the cookies do also look better!

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup coconut sugar or brown sugar, **see notes
  • 1 large egg
  • 1 teaspoon vanilla extract, optional
  • Salt flakes, optional topping

Instructions

  • Preheat oven to 350° FIn a medium bowl, add the peanut butter, egg, sugar, and vanilla extract.
  • Using a hand mixer, mix the ingredients until they are nicely combined and creamy looking. At this point, you may place the dough for a couple of hours in the fridge so it thickens up and easier to handle.
