- Oil: olive, or any neutral oil, I also love avocado oil
- Chicken breasts: you can use boneless and skinless chicken thighs
- Seasoning, salt, pepper
- Shallots, finely chopped
- Garlic 🧄, minced
- Chicken broth, low sodium, or vegetable broth
- Cream cheese
- Chipotle chile pepper, in adobo sauce
- Fresh cilantro
- Lime
How to Make it
Cook the chicken: First, heat oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and cook for six to eight minutes per side. Set aside.
Add the garlic: In the same skillet, have the shallots and garlic. Sauté for three to four minutes or until softened.
Add chicken broth: Next, pour the chicken broth into the skillet and scrape to deglaze it. Simmer for four to six minutes.

Chipotle Chicken Skillet
Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breast, boneless; skinless
- Kosher salt, to taste
- pepper, to taste
- 3 shallots, finely chopped
- 2 garlic cloves
- 1 cup chicken broth, low sodium
- 4 ounces cream cheese
- 1 chipotle pepper, in adobo sauce; finely chopped
- 1 tablespoon fresh cilantro, finely chopped; more for garnishment
- lime wedges, for serving
Instructions
- Heat the oil in a large skillet over medium heat.
- Season the chicken with salt and pepper and cook it for 6-8 minutes per side, or until brown and no longer pink in the center. Set aside.
- To the same preheated skillet, add the shallots and garlic. Saute for 3-4 minutes, or until the onion has softened.
- Pour the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for 4-6 minutes, or until reduced by half.
- Stir in the cream cheese and chipotle pepper. Whisk well to obtain a creamy sauce.
- Return the chicken to the pan and cook for 4-6 minutes more, or until the sauce is bubbly and the chicken is heated through.
- Garnish with fresh chopped cilantro and serve with lime wedges.
