  • Marinade the chicken – Place chicken strips in the marinade, mix thoroughly to coat the chicken. Ideally, allow the chicken to marinate for up to 1 hour.
  • Grill the chicken – Add chicken to a preheated grill and cook until grill marks appear and cooked through, about 8-10 minutes in total.
  • Prepare the gyros – Thinly slice the onion, tomatoes, and cucumbers. Microwave the pita bread for about 1
    minute.
  • Assemble – Load up the pita bread with a spoonful of tzatziki sauce, then add warm grilled chicken on top of the sauce, finally add sliced onion, tomatoes, and cucumbers.
  • Garnish, serve, and enjoy!

  • You don’t have to marinate the chicken for an hour but it really does add a lovely depth of flavor.
  • Make sure to use a preheated grill.
  • Grease the grill with a bit of oil to prevent the chicken from tearing when you flip it.
  • You can use flatbread, pita, or naan bread.
  • Feel free to mix in other fresh veggies.
  • Make sure to make/buy a good amount of tzatziki – better to have too much than too little!
  • Garnish with fresh dill.

These Grilled Chicken Gyros are a meal in themselves – super hearty! But you can of course serve them with a whole host of sides. Here are some ideas:

Do I have to grill the chicken?

You can make the chicken however you like, but grilling is an easy and healthier way to cook up the chicken, plus it gives lovely char lines. You can pan-fry, but that can make the chicken greasy. Another way would be to bake the chicken. To bake, heat the oven to 375 F, then shake off any excess marinade from the chicken and arrange them on a baking sheet lined with parchment paper. Bake in a preheated oven for about 20 minutes or until done.

You can check the doneness with a meat thermometer, if it registers 165F in the thickest part they are good to go!

can I use other cuts of chicken?

Yes, you can use another cut of chicken, especially if that’s what you have on hand. Just note that chicken breasts and thighs will take longer to cook than chicken tenders, so make sure to adjust your cook time.

Again, you can check doneness with a meat thermometer.

can I prep these gyro sandwiches ahead of time?

If you want to make this chicken gyro sandwiches ahead of time, prep the individual ingredients and assemble the gyro sandwiches when you’re ready to eat them. Chicken can be marinated a couple of hours in advance, so ideally prep your chicken and marinade separately, then combine when an hour or two away from servings.

Homemade tzatziki sauce will last for up to three days in the fridge.

Ingredients

For the gyro meat:

  • 1.5 lb chicken breast cut into strips
  • 1 teaspoon kosher salt or to your taste
  • 1/2 teaspoons ground black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon ground cumin
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tablespoons lemon juice

To assemble:

  • 1 cup homemade tzatziki sauce
  • 1 large red onion thinly sliced
  • 2 beef tomatoes sliced
  • 2 Persian cucumbers thinly sliced on the diagonal
  • 8 pita bread
  • fresh dill to garnish, optional

Instructions

To make the grilled chicken:

  • Place the chicken strips in a large bowl and sprinkle with the seasonings. Add minced garlic, olive oil, and lemon juice. Mix thoroughly to coat the chicken, then if time allows marinate it in the fridge for up to 1 hour.
  • Preheat a grill pan over medium-high heat. Grease the grill with a bit of oil, then add chicken and cook until grill marks appear and cooked through, about 8-10 minutes in total.

    These were really easy and good! I wish I had dill on hand but they were super flavorful nonetheless. My kids liked the marinated chicken which was a bit surprising because they usually prefer plain baked or grilled with s&p. I will be making your recipe again! Thanks!
