I usually make a batch at the beginning of the week, and they never last long in my house.
Recipe Overview
Key Ingredients
Below are the key ingredients to make protein banana muffins. Full measurements are listed further down in the recipe card.

- Ripe Bananas: The riper the bananas, the sweeter and more flavorful your muffins will be. They also help keep the muffins naturally moist.
- Plain Greek Yogurt: Greek yogurt adds extra protein while keeping the muffins soft and tender.
- Vanilla Protein Powder: A scoop of vanilla protein powder boosts the protein content and adds a subtle vanilla flavor. Use your favorite brand, but keep in mind that different protein powders may slightly affect the texture.
- Oat Flour: Oat flour gives these muffins a hearty texture and pairs perfectly with banana. You can also substitute all-purpose flour if that’s what you have on hand.
- Honey or Maple Syrup: A small amount of honey or maple syrup adds just the right amount of sweetness without overpowering the banana flavor.
- Cinnamon: Ground cinnamon brings warmth and complements the bananas beautifully.
- Mini Chocolate Chips or Walnuts (Optional): Mini chocolate chips make these muffins feel like a treat, while chopped walnuts add a delicious crunch and healthy fats.
Tips for the Best Banana Protein Muffins
- Use very ripe bananas for the best flavor and natural sweetness.
- Don’t overmix the batter, or the muffins may become dense.
- Scoop the batter evenly so all the muffins bake at the same rate.
- Check for doneness at 16 minutes since every oven is different.
- Let the muffins cool before storing to prevent condensation.
How To Make Banana Protein Muffins
Mix the Wet Ingredients: In a large bowl, whisk together the mashed bananas, eggs, Greek yogurt, honey, and vanilla until smooth.

Add the Dry Ingredients: oat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir just until combined.
Fold in the Mix-Ins: If using chocolate chips or walnuts, gently fold them into the batter.

Bake: Divide the batter evenly between the muffin cups and bake until the tops are lightly golden and a toothpick inserted into the center comes out clean.
Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Variations
- Mix in Walnuts: Chopped walnuts add crunch and pair perfectly with banana.
- Add Blueberries: Fresh or frozen blueberries make a delicious addition.
- Make Them Dairy-Free: Use your favorite dairy-free yogurt.
- Add Peanut Butter: Swirl a spoonful of peanut butter into the batter before baking.
Common Mistakes to Avoid
Using Under-ripe Bananas: Ripe bananas provide the best flavor and natural sweetness.
Over-mixing the Batter: Mix only until the ingredients are combined to keep the muffins soft and fluffy.
Adding Too Much Protein Powder: Stick to the amount listed in the recipe. Too much protein powder can make the muffins dry.
Overbaking: Remove the muffins as soon as a toothpick inserted into the center comes out clean to keep them moist.
