These Banana Protein Muffins are soft, fluffy, and naturally sweetened with ripe bananas and honey. Made with Greek yogurt and protein powder, they're an easy high-protein breakfast or snack that's perfect for meal prep.
Preheat the oven to 350°F and line a 12-cup muffin pan with liners or lightly grease.
In a large bowl, whisk together the mashed 2 ripe bananas, 2 large eggs, ½ cup plain Greek yogurt, ¼ cup honey or maple syrup, and 1 teaspoon vanilla extract.
Add the 1 cup oat flour, ½ cup vanilla protein powder, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Stir until just combined.
Fold in ⅓ cup mini chocolate chips or walnuts if using.
Divide the batter evenly among the muffin cups.
Bake for 16 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
