These Vegan Strawberry Popsicles are made with only 4 ingredients. They are so creamy, tasty, and super easy to make. A Perfectly refreshing summer treat that even adults can enjoy.

Talk about a berry sweet way to cool off this summer! These strawberry popsicles are so addicting, you would make them a few times a week! Even though there are some healthy popsicles you can find at the store these days, it really doesn’t hurt to make your own popsicles right at home! Plus they are yummier and very easy to make! Not to mention you know exactly what goes in your popsicle recipes. These Vegan Strawberry Popsicles are so tasty, fun to make, and one of our favorite popsicle recipes of all time.

  • Strawberries – use fresh or frozen. No canned
  • Sweetener – Any sweetener of choice
  • Coconut Milk – or almond milk
  • Lemon Juice

  • Blend: Place all the ingredients into a food processor and or high performing blender and blend until smooth.
  • Freeze: Distribute the mixture between 4-5 standard popsicle molds. Insert popsicle stick and freeze overnight.
  • Enjoy!

How do you unstick popsicles?

The fun part of these strawberry popsicles is when it comes time to unstick them. Meaning, remove them from the mold. Personally, I’ve found that the easiest way to do this is by filling a bowl that’s as tall as your mold with warm water and then dip the mold in the water to fully cover the mold for about 20 seconds. Remove and then carefully slide the popsicles off the mold. Two things to pay attention to, don’t use water that’s too hot, just warm water, and also don’t allow water to overflow into the popsicles. After popsicles are removed, go ahead and enjoy or place on a hard surface momentarily.

You can use this same recipe using other berries such as blueberries, blackberries, raspberries, or try a mixed-berry blend. Fresh herbs add another lovely dimension of flavor. You can add herbs like fresh mint or lavender. Or add a bit of heat with a dash of cayenne pepper!

Making mini popsicles

To make some mini pops, pour your Strawberry Popsicle mix into ice cube trays. When frozen, add the popsicle cubes to a pitcher of iced tea or lemonade – so good!

  • Experiment with different berries and herbs.
  • To remove popsicles from molds, run under warm water for 1-2 minutes.
  • Don’t let the popsicles sit out at room temperature in the molds until you can remove them. This causes the popsicle to thaw unevenly and they are likely to break when you serve them.

Ingredients

  • 2 Cups Strawberries chopped
  • 1/3 Cup Granulated zero calorie sweetener
  • 1/2 Cup Coconut milk full fat
  • 1 Tbsp Lemon juice
