INGREDIENTS FOR EASY VEGAN BANANA BREAD
You’re going to love this bread recipe. Make an extra loaf for meal prep and freeze it for the next time you get the craving for banana bread.
DRY INGREDIENTS
- Ground Flaxseed: Flaxmeal is used as a flax egg to keep it vegan but held together. Flaxseed is super nutritious and rich in healthy fats, omega-3s, protein, fiber, and more.
- Almond and Oat Flour: These two gluten-free flours allow this banana bread to remains super dense and moist while it bakes. If you’re using almond flour or oat flour, then you will almost always need an additional flour to balance it out so keep in mind you will need BOTH flours for this recipe.
- Baking Powder and Soda: Simple pantry ingredients such as baking powder and soda are baking essentials and allow this bread to rise to its fullest. Without these ingredients, you would have a flat bread!
- Kosher Salt: Kosher sea salt is used as an aid in baking the bread in addition to balancing out all the sweet flavors.
WET INGREDIENTS
- Water: Filtered water is used to create the flax egg and allows it to be an egg-like consistency.
- Bananas: Four ripe bananas are used to make sure this bread is filled with plenty of banana flavor and soft textures. The spottier and softer the bananas, the sweeter and tastier they are! Bananas are also healthier once they are a little more ripened, and the best banana breads are made with super spotty bananas.
- Coconut Oil: Melted coconut oil is used in place of butter to hold everything together and keep it moist. You can use any vegetable oil or a vegan butter.
- Almond Milk: Dairy-free almond or coconut milk are great for this recipe and keep it light. Any kind of plant-based milk will work.
- Coconut Sugar: Refined sugar-free coconut sugar is a great option if you’re wanting to avoid basic sugar. Coconut sugar is not as sweet so the banana bread is not as overwhelming.
- Orange: Bright orange peel extract or zest gives this bread recipe the perfect amount of aromatic citrus. The orange is a key ingredient in making sure this vegan banana bread tastes the best!
- Vanilla Extract: Pure vanilla extract is paired with the orange to make sure the banana bread is fragrant with flavor.
HOW TO MAKE VEGAN oat BANANA BREAD
- Preheat oven: First, make sure the oven is warm enough by preheating it to 350 degrees Fahrenheit, then line a loaf pan with parchment paper.
- Prepare flaxegg: In a small bowl, mix the water with the flaxmeal and gently stir. Allow the “egg” to rest for five minutes.
- Whisk dry ingredients: Meanwhile, in a medium bowl, whisk the almond and oat flour, baking powder, baking soda, and salt.
- Mix wet ingredients and combine with dry: In a separate medium bowl, mix the mashed bananas, coconut oil, almond milk, coconut sugar, extracts, and flaxegg until combined. Next, pour the wet ingredients over the dry and mix until just combined being sure not to overmix or the bread will not rise.
- Fold in the chocolate chips: Now, gently fold the chocolate chips into the bread batter.
- Bake the banana chocolate bread: Finally, bake the banana bread in the oven for fifty to sixty minutes or until a knife inserted into the center of the bread comes out clean.
- Rest: Once the bread is baked, remove it from the oven and allow it to rest in the pan for at least ten minutes before transferring to a wire rack to cool.
FREQUENTLY ASKED QUESTIONS
If you happen to run out of bananas while you’re baking your bread or don’t have as many as you thought you had, then you can replace one banana with ½ cup of applesauce.
Most storebought prepackaged banana bread is not any more healthy than normal bread, but this vegan banana bread recipe is healthier than normal bread because it is gluten-free and made without refined sugar!
The ripe bananas contain a substance called eugenol which dulls as it is exposed to heat so that is why the bread does not taste as prominent sometimes. For this recipe, we used four bananas to make sure the bread has plenty of banana flavor.
The bananas should definitely be soft and spotty to make sure they are flavorful enough for the bread.
