Simple Vegan Banana Bread is easy to bake in the oven for a yummy healthy breakfast recipe or a healthy dessert. Super moist and soft with rich chocolate and banana flavors with a hint of citrus, this banana bread recipe is one of my favorite sweet bread recipes ever. 🥰
You can make it with your favorite chopped nuts like walnuts or pecans for extra crunch, nutrition, and texture.
Why you will love it
- Fluffy and Delicious: This moist and egg-free banana bread is so soft and delicious to bite into especially while it is warm. The melted chocolate chips blend perfectly with the sweet bananas and coconut sugar to make a recipe that is not too sweet but sweet enough.
- Easy and Straightforward Recipe: All you have to do in this simple banana recipe is mix a handful of pantry ingredients and bake it all together into one loaf. Easy enough, right?
- Kid-Friendly: Everyone can enjoy this sweet bread. Kids can have them right before school or as an after-school snack.
Ingredients you will need
You’re going to love this bread recipe. Make an extra loaf for meal prep and freeze it for the next time you get the craving for banana bread.
- Ground Flaxseed: Flax Meal is used as a flax egg to keep it vegan but held together.
- Almond and Oat Flour: These two gluten-free flours allow this banana bread to remain super dense and moist while it bakes.
- Baking Powder and Soda: Baking essentials and allow this bread to rise to its fullest.
- Kosher Salt
- Water: Mix the flax meal with to get an egg-like consistency.
- Bananas: Use ripe bananas if possible.
- Coconut Oil: Melted coconut oil is used in place of butter to hold everything together and keep it moist. You can use any vegetable oil or a vegan butter.
- Almond Milk: Dairy-free almond or coconut milk is great for this recipe and keeps it light. Any kind of plant-based milk will work.
- Coconut Sugar: Refined sugar-free coconut sugar is a great option if you’re wanting to avoid basic sugar. Coconut sugar is not as sweet so the banana bread is not as overwhelming.
- Orange Zest: Bright orange peel extract or zest gives this bread recipe the perfect amount of aromatic citrus. It is optional though so if you do not have it you can skip it.
- Vanilla Extract: Pure vanilla extract is paired with the orange to make sure the banana bread is fragrant with flavor.
How to make vegan banana bread
- Preheat oven: First, make sure the oven is warm enough by preheating it to 350 degrees Fahrenheit, then line a loaf pan with parchment paper.
- Prepare flax egg: In a small bowl, mix the water with the flax meal and gently stir. Allow the “egg” to rest for five minutes.
- Whisk dry ingredients: Meanwhile, in a medium bowl, whisk the almond and oat flour, baking powder, baking soda, and salt.
- Mix wet ingredients and combine with dry: In a separate medium bowl, mix the mashed bananas, coconut oil, almond milk, coconut sugar, extracts, and flax egg until combined. Next, pour the wet ingredients over the dry and mix until just combined being sure not to overmix or the bread will not rise.
- Fold in the chocolate chips: Now, gently fold the chocolate chips into the bread batter.
- Bake the banana chocolate bread: Finally, bake the banana bread in the oven for fifty to sixty minutes or until a knife inserted into the center of the bread comes out clean.
- Rest: Once the bread is baked, remove it from the oven and allow it to rest in the pan for at least ten minutes before transferring to a wire rack to cool.
Common Questions 🫶🏻
If you happen to run out of bananas while you’re baking your bread or don’t have as many as you thought you had, then you can replace one banana with ½ cup of applesauce.
Most store-bought pre-packaged banana bread is not any more healthy than normal bread, but this vegan banana bread recipe is healthier than normal bread because it is gluten-free and made without refined sugar!
The ripe bananas contain a substance called eugenol which dulls as it is exposed to heat so that is why the bread does not taste as prominent sometimes. For this recipe, I used four bananas to make sure the bread has plenty of banana flavor.
The bananas should definitely be soft and spotty to make sure they are flavorful enough for the bread.
