- 1 pound flank steak
- ¼ cup olive oil
- 2-3 garlic cloves, minced
- 2 teaspoons oregano, dried
- ½ teaspoon red chili flakes, to taste
- 1 teaspoon Kosher sea salt
- ¼ teaspoon black pepper, ground
Pineapple Salsa
- 2 cups pineapple, fresh; diced
- 1 red bell pepper, small; chopped
- ¼ cup cilantro, chopped
- 1 jalapeño, deseeded and chopped
- 1 lime, juiced
- Kosher sea salt, to taste
- black pepper, to taste
Instructions
- Place the steak in a large ziploc bag together with the oil, garlic, oregano, chili flakes, salt and pepper. Stir well through the bag and allow it to marinate for 1 hour in the fridge.
- Meanwhile, prepare all the ingredients for the salsa and toss in a mixing bowl.
- Remove the steak from the fridge 15 minutes prior to cooking.
- Preheat an outdoor grill or a grill pan over medium-high heat.
- Grill the steak for 1-2 minutes per side, or until done to your liking.
