- 22-24 Medjool dates, pitted
- 1½ cups warm 2% milk
- ½ cup melted coconut oil
- 1 large egg
- 2 teaspoons vanilla extract
- 1¼ cups all-purpose flour, or whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon kosher fine salt
Instructions
- Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a small bowl, stir together the 2 tablespoons melted coconut oil, ⅓ cup dark brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg until smooth. Spread the mixture evenly over the bottom of the prepared cake pan.

- Arrange the 3 medium Honeycrisp or Gala apples in slightly overlapping circles over the sugar mixture, covering the entire bottom of the pan.

Transfer the dates and 1½ cups warm 2% milk to a blender, then blend until completely smooth. Add the ½ cup melted coconut oil, 1 large egg, and 2 teaspoons vanilla extract and blend again until combined.

- In a large bowl, whisk together the 1¼ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and ¼ teaspoon kosher fine salt. Pour the blended date mixture into the dry ingredients and stir just until no dry streaks remain.
- Carefully spoon the batter over the apples and gently smooth the top with a spatula.

- Bake for 40 to 45 minutes, or until the center springs back lightly and a toothpick inserted into the cake comes out clean.
- Allow the cake to cool in the pan for 10 to 15 minutes. Run a knife around the edge, place a serving plate over the pan, and carefully invert the cake.
