This fluffy and moist Cottage cheese banana bread is going to be your go-to banana bread. It takes 10 minutes of prepping and is the perfect breakfast or dessert that everyone can enjoy. It’s just so good!

I was pleasantly surprised at how fluffy and moist this banana bread with cottage cheese turned out. It was very easy to make, too. I love the added cottage cheese because it adds moisture and some protein to the banana bread.

Each slice has 8 grams of protein. Enjoy your dessert while adding in some protein. So why not? My kids love it, too, and I bet you will do as well.

Ingredients you will need

Below is a list of ingredients to make this banana bread. Full measurements are listed further down below in the recipe card.

  • Ripe bananas or 1 1/4 cup mashed
  • Eggs: You can use Flax eggs instead
  • Cottage cheese: I used 4% milk fat from good culture.
  • Coconut oil: any other oil will work
  • Light brown or cane sugar: Or any other sugar. Allulose also works.
  • Vanilla extract
  • Flour of your choice like all-purpose, wheat, or oat flour
  • Cinnamon: could be optional, and adds a nice flavor.
  • Baking powder
  • Baking soda
  • Salt
  • Walnuts, chopped, could also be optional, skip if you do not like nuts.
  • Optional: one banana sliced in half to top the banana bread

How to make cottage cheese banana bread

Below is a step-by-step visual of how to make this banana bread that you may find helpful. The full recipe is also found in the recipe card, along with a video.

Preheat the oven to 350 F and line a 9×5 pan with parchment paper.

In a bowl, mash the bananas using a fork, and add the eggs, cottage cheese, coconut oil, sugar, and vanilla extract. Whisk to combine.

Into a separate bowl, add the flour, cinnamon, baking powder, baking soda, salt, and cinnamon. Toss to combine.

Combine the wet and dry ingredients. Using a spatula, mix to incorporate.

Fold in the walnuts and transfer the batter to the prepared pan. Top with sliced banana halves if using.

Bake for 55-65 minutes or until a toothpick comes out clean.

Note: For the last 15-20 minutes, if the banana bread has browned, you can set a foil wrap over the bread to prevent it from browning some more until it is fully cooked.

Allow it to cool for 5-10 minutes before serving.

Tips from my kitchen 🥰

Recipe Tip

  • Feel free to blend the cottage cheese into a smooth texture before adding it to the mashed bananas.
  • Instead of walnuts, you may add chocolate chips or raisins.
  • Any flour would work, but be mindful if you use almond flour because it retains moisture, and with the cottage cheese, it will be quite soft. I would suggest adding another egg if you decide to use almond flour.
  • Allow the banana bread to cool for 10 minutes before slicing.

Recipe Variations

  • Use chocolate chips or raisins instead of walnuts.
  • Don’t like walnuts, swap them with almonds or pecans.
  • Top with walnuts only instead of the sliced banana on top.
  • Want to make it chocolate? Add 1/4 cup cocoa powder to the dry mixture.
  • Instead of walnuts add blueberries. If you use blueberries, coat 1/2 cup of blueberries with 1 tablespoon of flour before folding into the batter in step 5 in the recipe card or step 7 in my images.

Common Questions

Can I blend the cottage cheese?

Yes. You sure can. It is much better to do so if you do not like the texture of cottage cheese.

Can I use fat-free cottage cheese?

Fat-free or full-fat cottage cheese will work. I used 4% milk fat, and sometimes I use 2%.

Can I leave it on the counter overnight?

Yes. I leave mine on the counter covered overnight all the time.

How Do I store this cottage cheese banana bread?

Slice and place them in a sealed container in the fridge for up to 7 days.

Can I free this banana bread?

Yes. You can Bake a couple of batches and freeze for up to 3 months. I would suggest 2 things though. Skip adding the sliced banana on the top and allow it to cool fully before you wrap it well and freeze it.

Simple, moist, and fluffy banana bread made with ripe bananas, cottage cheese, and other pantry staples. Easy to make and the perfect breakfast or a midday snack or treat.

Ingredients

  • 3 large ripe bananas , or 1 1/4 cups mashed
  • 2 large eggs
  • 1 cup cottage cheese
  • 1/3 cup coconut oil
  • 1/2 cup light brown or cane sugar
  • 2 teaspoons vanilla extract
  • 2 cups flour of your choice like all-purpose, wheat, or oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped, optional
  • one banana sliced in half, optional: to top the banana bread

Instructions

Notes

  • Note: In my video, I didn’t add the walnuts into the banana bread because my kids don’t like nuts in the banana bread. I did add them on top because it’s easier for them to pick them out that way. Lol.
  • Bananas should be spotted at least so they are sweet enough, otherwise you would have to add a bit more sugar or honey.
  • You can blend the cottage cheese before you add it in with the bananas. But that’s just an extra step for me, and I am lazy sometimes haha. But you can blend it if you do not care for the curd of cottage cheese. I do not think it will be better a bit, though.
  • The best way to check if the banana bread is cooked through is to use a toothpick. Ovens vary, and it is hard to give an exact time. Fifty-five minutes was perfect in my oven.
  • I always get 10 slices but you may be able to do 12 slices.
