Simple, moist, and fluffy banana bread made with ripe bananas, cottage cheese, and other pantry staples. Easy to make and the perfect breakfast or a midday snack or treat.

Instructions
Preheat the oven to 350 F and line a 9x5 pan with parchment paper
In a bowl, mash the 3 large ripe bananas using a fork, and add the 2 large eggs, 1 cup cottage cheese (can be blended first), 1/3 cup coconut oil, 1/2 cup light brown or cane sugar, and 2 teaspoons vanilla extract. Whisk to combine.
Into a separate bowl, add the 2 cups flour of your choice like all-purpose, 1 teaspoon cinnamon, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt. Toss to combine.
Combine the wet and dry ingredients. Using a spatula, mix to incorporate.
Fold in the 1/2 cup walnuts (chopped) and transfer the batter to the prepared pan. Top with one banana sliced in half if using.
Bake for 55-65 minutes or until a toothpick comes out clean. Note: For the last 15-20 minutes, if the banana bread has browned, you can set a foil wrap over the bread to prevent it from browning some more until it is fully cooked.
Allow it to cool for 5-10 minutes before serving.

Note: In my video, I didn't add the walnuts into the banana bread because my kids don't like nuts in the banana bread. I did add them on top because it's easier for them to pick them out that way. Lol.
Bananas should be spotted at least so they are sweet enough, otherwise you would have to add a bit more sugar or honey.
You can blend the cottage cheese before you add it in with the bananas. But that's just an extra step for me, and I am lazy sometimes haha. But you can blend it if you do not care for the curd of cottage cheese. I do not think it will be better a bit, though.
The best way to check if the banana bread is cooked through is to use a toothpick. Ovens vary, and it is hard to give an exact time. Fifty-five minutes was perfect in my oven.
I always get 10 slices but you may be able to do 12 slices.
