Nothing beats the real deal of crunchy fried potatoes but this air-fried zucchini is a great alternative if you are looking to start eating healthier. They are delicious and loaded with flavor and nutrients. It is a fun and easy way to add more veggies into your diet white you still get to have a variety of foods. These parmesan zucchini fries can be made in the oven if you don’t have an air-fryer and if you prefer baking them, then you can bake them for about 20 minutes or simply make our Crispy Baked Zucchini Fries recipe. Ingredients you will need and substitutes

  • Avocado oil cooking spray: or any cooking spray would work. We prefer avocado or olive oil spray. You will need this to coat the zucchini and use as a binder in place of eggs.
  • Zucchini: we use green zucchini but you can use the yellow ones as well.
  • Parmesan cheese: grate your own or you can get store bought. Other cheese you can use is grated romano cheese.
  • Breadcrumbs: panko breadcrumbs was used, but any other type will work. To keep this a low carb fries option, you can use almond flour, or crushed pork rinds.
  • Seasonings: Italian seasoning, salt, and pepper is all you need. But you can add more seaosnings if you like. Consider adding the following: 1 tsp paprika, 1 tsp onion powder, and/or 1 tsp garlic powder.
  • Fresh parsley: this ingredient is used to garnish but its optional if you don’t care for it.

How to make this air-fryer zucchini fries recipe

  • First, prepare and cut the zucchini into fries or any other shape you like. Preheat air-fryer if needed for 5 minutes.
  • Next, to a shallow plate, combine the parmesan cheese, Panko, Italian seasoning, salt and pepper. (if you are adding any other seasonings, go ahead and add them now with the dry mixture.)
  • Then, spray the zucchini with avocado oil or any other spray oil of choice, then gently press each into the Parmesan mixture to evenly coat on all sides.
  • Spray a bit of oil on the bottom of your air fryer and air fry the zucchini fries at 400F for 8-10 min, or until golden and crisp on the outside or until golden brown.
  • Finally, garnish with freshly chopped parsley and enjoy!

  • Serve with any dipping sauce like ketchup, ranch dressing, or marinara sauce.

  • 4 small zucchini, halved and quartered lengthwise
  • ½ cup Parmesan cheese, finely grated
