Prepare and cut the zucchini into fries or the shape of your choice. Preheat air-fryer if needed for 5 minutes.
To a shallow plate, combine the parmesan cheese, Panko, Italian seasoning, salt, and pepper.
Spray the zucchini with avocado oil or any other spray oil of choice, then gently press each into the Parmesan mixture to evenly coat on all sides.
Spray a bit of oil on the bottom of your air fryer and air fry them at 400F for 8-10 min, or until golden and crisp on the outside or until golden brown.
Garnish with freshly chopped parsley and enjoy!

Low carb and keto option: use pork rinds instead of breadcrumbs
Vegan-option: use dairy-free shredded cheese.
Shape zucchini into any shape you like. They can be cut into bigger sizes or round in shape.
Use any breadcrumbs of your choice.
Any oil spray will do if you don't have avocado oil spray.
Shred your own parmesan cheese is possible
If you don't have an air-fryer you can bake these at 400F for 18-20 minutes or until crispy.
Air fry them in batches.
Serve with any dipping sauce like ketchup, ranch dressing, or marinara sauce.
